[通少食譜]通少爆炸奇脆雞 (Chicken with kiwi and popcorn in miracle whip sauce)

.: 材料 Ingredients :. 
Group A
1- 鹽1茶匙 (1 tsp of salt)
2- 雞粉1茶匙 (1 tsp of chicken powder)
3- 黑胡椒粉1茶匙(1 tsp of black pepper flake)
4- 糖1茶匙 (1 tbs of sugar)
5- 雞蛋1隻 (1 egg)
6- 麥皮2湯匙 (oatmeal, 2 tbsp)
7- 粟粉1湯匙 (corn starch, 1 tbsp


Group B;
1- 無皮無骨雞柳400克, 切件 (Boneless, skinless chicken fillet, cut into pieces, 400g)
2- 中型洋蔥1個, 去皮, 切件 ( 1 medium onion, peeled, cut into pieces)
3- 紅蔥頭(乾蔥)蓉1湯匙 (Diced shallot, 1 tbsp)
4- 蒜蓉1湯匙 (Minced garlic, 1 tbsp)
5- 甜椒(任何顏色)1個, 去囊, 切件 (Bell pepper(any color), core removed, cut into pieces)
6- 新鮮牛油爆谷2杯 (Fresh popcorn with butter, 2 cup)
7- 新鮮奇異果2個, 去皮, 切粒 (2 fresh kiwi, peeled, diced) 
.: 汁料 Sauce mixtures :.
1- 奇妙醬(沙拉醬)3湯匙 (Mircale whip, 3 tbsp)
2- 糖3茶匙 (Sugar, 3 tsp)
3- 鮮奶1/2杯, 約100毫升 (Milk, 1/2 cup, about 100 ml)
4- 淡奶(花奶)2湯匙, 非必要 (evaporated milk, 2 tbsp, optional)

.: 做法 Directions :.  
Step 1:
 
將材料Group A 和雞件混合攪勻醃15分鐘, 易潔鑊中火落油1湯匙起鑊, 將雞肉煎成每面金黃(每面煎約3分鐘), 盛起隔油備用
Combine Group A ingredient with the chicken.  Mix it well and marinade for 15 minutes. Heat the non-sticky pan with 1 tbsp of oil over medium heat. Pan fry the chicken until golden brown (about 3 minutes for each side).
 
Step 2: 
鑊洗淨抹乾, 再用大火落1湯匙油起鑊, 落洋蔥, 紅蔥頭, 蒜蓉, 青椒連1/3茶匙鹽炒至洋蔥炒軟(約2分鐘), 汁料所有材料攪勻至順滑, 加入和其他材料兜勻煮滾, 加入雞件
Clean and dry the pan. Heat it with 1 tbsp of oil over high heat. Add in the onion, shallot, garlic, and bell pepper with 1/3 tsp of salt. Stir-fry the ingredient until the onion is soft (about 2 minutes).   Combine all sauce mixture ingredients until smooth.  Add in the sauce mixture and mix it well with the ingredients.  Add in the cooked chicken.

Step 3:
 
再加入爆谷, 奇異果攪勻, 上碟即可
Add in the popcorn and kiwi.  Mix it well. Dish it up and serve it hot.
小貼士 Cook's notes :.
1- 爆谷用新鮮整的的會比較脆口, 通常可以在較大型的超市買有盒裝的"微波爐爆谷" ,只要按依指示放入微波爐, 幾分鐘就可以整到 
2- 超市也有一包包的粟米乾賣的爆谷, 做法也簡單, 只需用易潔鑊加約1茶匙油燒熱 , 放入粟米乾 , 馬上蓋頂熄火, 直至沒有聲音就完成
3- 汁料必需攪勻才入鑊, 否則好容易會起粒 
4- 爆谷和奇異果都不要太早落, 否則會令兩者變得太腍, 影響口感
5- 奇異果選擇熟一點比較甜, 買時可以輕輕握一下, 若軟熟就是比較熟

1- It is recommended to use the fresh popcorn as the texture is better.  It is easy to get fresh popcorn by using the microwave popcorn from supermarket.
2- Or you buy the dried corn kernel from supermarket.  Heat the pan with 1 tsp of oil over high heat.  Put in the kernel and cover it with the lid.  Turn the heat off and wait until it is quiet.
3- It will be easier to cook the sauce mixture when it is combined.
4-  Add the kiwi and popcorn at last in order to keep it crispy

5- It is better to use the mature kiwi.  A mature kiwi will be soft to touch when you press it.
