[通少食譜]苦甜滋味炒牛柳 (Stir-fried beef with bitter melon and preserved radish)

苦瓜好苦? 好怕食佢?  photo onion2064.gif唔知點解, 細個真係好怕食, 但係人越大, 越喜歡佢, 越苦越享受, 真係好得意
不過我都知仲有好多人唔喜歡它的苦味, 我今次加埋甜菜圃去炒,  photo onion2063.gif苦味比啲鹹甜味蓋過, 又唔覺好苦喎
另外,  photo onion2046.gif大家亦可以將佢浸浸鹽水先炒, 聽聞都可以減低個苦味的, 大家都可以試試啊
不過你問我, 我始終苦瓜有苦味,  photo onion2073.gif先苦後甜同做人一樣啊

.: 材料 Ingredients :. 
1- 柳400克, 切 (Beef Tenderloin, cut into cubes, 400g)
2- 苦瓜2條, 約100克, 去囊, 切 (2 bitter melon, core removed, diced, about 100g)
3- 中型洋蔥半個, 去衣, 切 (1/2 medium onion, peeled, cut into pieces)
4- 甜菜脯50克, 切 (Preserved radish, diced 50g)
5- 甜椒(任何顏色)1個, 去囊, 切粒 (1 bell pepper (any color), core removed, diced)
6- 蒜蓉1湯匙 (Minced garlic, 1 tbsp)
7- 熱水半杯, 約120毫升 (hot water, 1/2 cup)

.: 汁料 Sauce Mixture :. 
1- 蠔油1湯匙 (Oyster sauce, 1 tbsp)
2- 甜麵醬1湯匙, 非必要 (Sweet bean sauce, 1 tbsp, optional)
3- 熱水1湯匙 (hot water, 1 tbsp)

.: 做法 Directions :.  
Step 1:

牛柳用"
通少中式醃肉法" (但不要加鹽) 醃15分鐘備用, 易潔鑊用大火落1湯匙油起鑊, 將牛肉炒至7成熟, 盛起隔油備用
Marinade the beef with "
Tony's Marinade Method" (do not add salt). Heat the non-sticky pan with 1 tbsp of oil over high heat. Stir-fry the beef until it is 70% cooked. Put it in sieve over a bowl. Put it aside.

Step 2:

鑊洗淨抹乾, 加入1/2湯匙油用中快火燒熱, 加入蒜頭和洋蔥連1/3茶匙鹽炒至軟身(約2分鐘)
Clean the pan and dry it well. Heat it again with 1/2 tbsp of oil over medium-high heat. Add in the garlic and onion with 1/3 tsp of salt. Stir-fry the ingredients until the onion is soft (about 2 minutes)

Step 3:
 
加入苦瓜, 甜菜脯, 甜椒炒2分鐘, 加入熱水, 轉中火, 蓋頂炆5分鐘或至苦瓜腍身
Add in the bitter melon, preserved radish and bell pepper.  Stir-fry the ingredients for 2 minutes.  Add in the hot water.  Turn the heat to medium.  Cover and simmer for 5 minutes or until the bitter melon is soft.

Step 4:

最後加入牛肉和汁料兜勻煮熱, 上碟即成
Add in the beef and the sauce mixture.  Mix it well and dish it up.  Serve it in hot.
 
.: 小貼士 Cook's notes :.
1- 牛肉要腍必須買牛柳或牛眼, 買錯部位牛肉想腍會有一定難度, 醃牛肉時不要加鹽, 即使一定要加, 也請於炒前才好加
2- 牛肉要逆紋切 (

3- 沒有甜麵醬可以改用海鮮醬代替的
4- 菜圃切粒先先試味, 若過鹹, 可以出水5-10分鐘令它鹹味降低
5- 苦瓜可以先浸浸鹽水減低它的苦味

1- It is better to use tenderloin beef or even rib eyes as their texture is more soft and tender. It is also not recommended to marinade it with salt.
2- It is important to cut across the grain of the beef (

3- You can replace the sweet bean paste with hoisin sauce.
4- Taste the preserved radish before dicing it. Blanch it for 5-10 minutes if it is too salty.
5- Soak the diced bitter melon in salty water can reduce its bitter flavor.
