[自創食譜] 惹味毛瓜粒粒香 (Stir-fried hairy squash and minced pork)

哩個餸真係超簡單, 但非常好味道, 毛瓜同芋絲吸晒啲味, 仲好食過啲豬肉呀, 哈哈哈,  我連小貼士都唔知點寫好呀, 因為真係無咩難度去整, 總知炒埋一碟就可以食譜, 非常快捷啊,  呵呵
 
記得試下啦, 包你會喜歡的 
.: 材料 Ingredients :.
1- 免治豬肉400克 (Minced pork, 400g)
2- 洋蔥半個, 去衣切粒 (1/2 onion, peeled, diced)
3- 毛瓜1條, 去皮, 去囊, 切件 (1 hairly squash, peeled, core removed, cut into pieces)
4- 蝦米2湯匙, 浸軟 (Dried shrimps, soaked, 2 tbsp)
5- 甜椒(任何顏色)1個, 去囊, 切件 (1 bell pepper (any color), core removed, cut into pieces)
6- 紅蔥頭(乾蔥)蓉1湯匙 (Diced shallot, 1 tbsp)
7- 蒜蓉1湯匙 (Minced garlic, 1 tbsp)
8- 芋絲12粒, 140克 (Small Yam Bundles, 140g)
9- 黑欖菜2湯匙, 非必要 (Chinese preserved black olives leaves, 2 tbsp, optional)
10- 粟粉水- 2湯匙粟粉+1湯匙凍水 (Corn starch mixture - 2 tbsp of corn starch + 1 tbsp of cold water)

.: 汁料 Sauce mixture :.
1- 雞湯2/3杯, 150毫升 (2/3 cup of chicken broth)
2- 蠔油1湯匙 (oyster sauce, 1 tbsp)
3- 糖1/2茶匙 (Sugar, 1/2 tsp)
 
.: 做法 Directions :.  
Step 1:
 
肉用通少中式醃肉法(但不要加老抽)醃15分鐘, 易潔鑊用快火落油約1/2湯匙起鑊, 加入紅蔥頭, 蒜蓉,  蝦米炒香 (約1分鐘), 再加入豬肉炒至5成熟, 加入毛瓜兜勻
Marinade the pork with
Tony's Chinese marinade method (but don't add the dark soy sauce) for 15 minutes. Heat the non-sticky pan with 1/2 tbsp of oil over high heat. Add in the shallot, garlic and dried shrimps.  Pan-fry the ingredients until fragrant (about 1 minutes).  Add in the pork and stir-fry it until 50% done.  Add in the hairly squash and mix it well.
 
Step 2:

加入洋蔥, 甜椒, 芋絲兜勻炒3分鐘
Add in the onion, bell pepper and yam bundle, and mix it well.  Stir-fry all the ingredients for 3 minutes 
 
Step 3:
 
加入汁料煮滾, 蓋頂轉中火炆10分鐘
Add in the sauce mixture.  Cover and simmer for 10 minutes over medium heat.
 
 
Step 4:
 
加入粟粉水攪勻至汁料杰身, 再加入黑欖菜兜勻, 上碟即可
Add in the corn starch mixture.  Stir the sauce until it is thicken.  Add in the black olive and mix it well.  Dish it up and serve it hot.
 
.: 小貼士 Cook's notes :.
1- 若怕豬肉的臊味, 豬肉可以分開炒熟, 要將豬肉炒至乾身臊味就會散去 

1- If you worry about the pork smell, you can cook the pork sperately until it is fully cooked and dried.
