[自創食譜] 流沙蝦球撞冬瓜 (Seafood and winter melon with salty egg)

冬瓜通常都好清淡, 今次用鹹蛋去整就啱晒, 一鹹一淡真係夠晒正呀
 
冬瓜比較寒涼, 太太唔多受得, 所以我會加2-3片薑去煮下佢, 真無需要再怕啦, 我喜歡用雞湯去煮啲冬瓜, 因為會比較有味道一啲, 當然大家唔喜歡可以就咁用水煮都得
 
鹹蛋我試過好幾次, 就咁加入去煮通常都會煮到無晒起沙個質感, 反而, 預先同啲油(牛油)撈勻, 最後加埋兜勻上就非常有流沙感覺啦, 當然哩個係我做法, 如果你有更好建議可以話我知喎
 
哩個流沙冬瓜加埋香口蒜蓉同乾瑤柱, 個味道已經係無敵, 再加埋爽口的蝦仁, 包你好食到停唔到口呀, 記得試下啦

.: 材料 Ingredients :.
1- 冬瓜500克左右, 去皮去囊, 切件 (Winter Melon, peeled off, core removed, cut into pieces, 450g)
2- 蝦仁300克, 去殼 (Shrimps, shell removed, 300g)
3- 乾瑤柱2-3隻, 浸軟撕碎 (2-3 Dried scallop, soaked, shredded)

4- 蟹柳200克左右  (Imitated crab meat, 200g)
5- 鹹蛋3隻 (3 Salty Preserved egg
)
6- 牛油3湯匙 (Unsalted butter, 3 tbsp)
7- 蒜蓉3湯匙 (Minced garlic, 3 tbsp)
8- 薑2片 (2 Ginger slices)
9- 清雞湯3/4杯 (Chicken Broth, 3/4 cup)

.: 醃料 Seasoning :.
1- 鹽1/2茶匙  (Salt, 1/2 tsp)
2- 白胡椒粉1/2匙 (White pepper, 1/2 tsp)
3- 粟粉1/2湯匙 (Corn starch, 1/2 tbsp)
 
.: 做法 Directions :.  
Step 1:
 
蝦去腸, 再用2湯匙粟粉擦勻, 用清水洗淨抹乾, 再用醃料醃15分鐘備用, 同時雞湯於鑊中用快火煲滾, 加入薑片和冬瓜, 蓋頂煮10分鐘, 冬取出隔汁備用, 同時間, 也張鹹蛋白和黃分開, 蓋上濕紙, 用微波爐煮2-3分鐘, 蛋白用叉弄碎, 蛋黃加入牛油壓碎, 攪勻至順滑備用

Remove the vein from the shrimps.  Coat it with 2 tbsp of corn starch.  Rinse it well.  Dry it and marinade it with the seasoning for 15 minutes.  Add the chicken broth in a sauce pan and bring it to boil.  Add in the ginger slices and winter melon.  Cover and simmer for 10 minutes.  Put the melon in a sieve over a bowl and put it aside.  While cooking the melon, separate the salty egg yolk and white into 2 containers.  Cover the containers with wet paper towel.  Cook them in microwave for 2-3 minutes.  Shred the cooked egg white with a fork.  Add in the butter into the cooked egg yolk.  Mash the egg yolk mixture until it is smooth.  Put it aside.

Step 2:

中快火落1湯匙油起鑊, 放入蝦仁, 炒至蝦仁變硬及轉色(約3-4分鐘), 盛起隔油備用
Heat the pan with 1 tbsp of oil over medium high heat. Stir-fry the shrimps until it turns hard and no longer transparent (about 3-4 minutes) .  Put the shrimps in a sieve over a bowl.  Put it aside.

Step 3:
 
鑊洗淨, 中快火落1湯匙油起鑊, 落蒜蓉和乾瑤柱炒至蒜蓉微黃, 加入蝦仁, 蟹柳和鹹蛋白, 再加入1湯匙熱水(或酒)兜勻炒2分鐘 
Clean the pan and dry it well.  Heat it again with 1 tbsp of oil over medium high heat.  Add in the minced garlic and dried scallop.  Stir-fry until the garlic is lightly brown.  Add in the shrimps, crab meats, salty egg white and 1 tbsp of hot water (or cooking wine).  Mix it well and continue stir-frying for 2 minutes.

Step 4:

加入冬瓜兜勻煮熱(炒2分鐘), 再加入鹹蛋黃牛油混合物兜勻上碟即成
Add in the winter melon and mix it well (stir-fry for another 2 minutes).  Add in the salty egg yolk mixture and mix it well.  Dish it up and serve it hot.
 

.: 小貼士 Cook's notes :.
1- 雞湯有濃縮的(要加水開稀)也有直接用的(不需要再加水開稀), 食譜中所用的, 是不需要再加水開稀那隻
2- 鹹蛋黃牛油混合物最後先加, 能確保流沙的狀態
3- 蝦用粟粉擦勻再洗, 能令蝦更白滑


1- Chicken broth using in this recipe is the one that you can serve it directly without adding any water

2- Egg yolk mixture is better to mix in at the end to ensure the smooth texture

3- Shrimps will be cleaner by coating the shrimps with the corn starch before rinsing it.
