[自創食譜]味噌茄子 (Stir-fry minced pork with eggplants in miso sauce)

味噌真係同蠔油一樣, 非常之易用, 不過味噌其實有好多種, 最基本都有紅, 白之分, 紅的味道較濃, 我覺得用來當蠔油用就最適合, 白就清香, 用來做湯會好一點, 當然啦, 如果大家去超市看一看, 就算白紅兩種都仲可以細分的, 有些是有豆粒, 有些是黃色的, 有些是叫八丁的, 不過唔需要太講究啦, 是旦買一紅一白就得啦

這個餸其實同麵豉湯味道差唔多, 如果你喜歡飲麵豉湯的話, 這個餸一定啱你, 味道鹹鹹香香, 最適合用來送飯呀, 哈哈

 

.: 材料 Ingredients :.

1- 免治豬肉(瘦)400克 (400g of lean ground pork)
2- 洋蔥半個, 去衣切粒 (1/2 onion, peeled, diced)
3- 青紅椒各半個, 去核切粒 (Half of red and green bell pepper, core removed, diced)
4- 蒜蓉1湯匙 (1 tbsp of minced garlic)
5- 茄子2條, 切大件 (2 eggplants, cut into large pieces)
6- 青蔥粒1湯匙 (1 tbsp of diced green onion)
7- 紅味噌3湯匙 (3 tbsp red miso paste)
8- 熱水1/4杯 (1/4 cup of hot water)
9- 粟粉1湯匙+2湯匙凍水 (1 tbsp of corn starch + 1 tbsp of cold water)

.: 汁料 Sauce mixture :.

1- 日本醬油1/2茶匙 (1/2 tbsp Japanese Soya)
2- 熱水1/2杯左右 (1/2 cup of hot water)
3- 糖1/2茶匙 (1/2  tsp of sugar)
4- 鰹魚粉(或雞粉) 1茶匙 (1 tsp of benito powder or chicken powder) 

.: 做法 Steps :.


1-  豬肉用"通少中式醃肉法" (別加老抽) 醃15分鐘備用, 同時間, 將豆腐於滾水中煮3分鐘, 隔好水後上碟備用

Marinade the pork with "Tony marinade method" (but do not add dark soy sauce) for 15 minutes.  
Meanwhile, blanch the tofu for 3 minutes.  Drain it well and dish it up.  Put it aside.


2-  快火落1/2湯匙油起鑊, 將豬肉炒熟, 盛起隔油備用

Heat the pan with 1/2 tbsp of oil over high heat.  Stir-fry the pork until fully cookedDrain it in a sieve over a bowl and set it aside.

3-  加鑊洗淨, 再用中快火落1/2湯匙油起鑊, 加入蒜蓉, 洋蔥, 青紅椒粒, 茄子連1/3茶匙鹽, 炒至洋蔥軟身(約2分鐘), 加入汁料轉中火煮滾, 蓋頂炆5分鐘

Clean and dry the pan.  Heat the pan with 1/2 tsp of oil over medium high heat.  Add in the garlic, onion, green/red peppers, and eggplants with 1/3 tsp of salt.  Stir fry all the ingredients until the onion is soft (about 2 minutes).  Add in the sauce mixture and bring it to boil.  Turn the heat the medium.  Cover and simmer for 5 minutes   


4-  將味噌和熱水於碗內攪勻至無粒備用, 將豬肉回鑊, 加入味噌醬和粟粉水兜勻至杰身, 上碟灑上蔥粒即成

Mix the miso with hot water in a bowl until smooth.  Add in the pork, miso mixture and the corn starch mixture until the sauce is thicken.  Dish it up.  Top it with green onion and serve it in hot.
 

.:小提示 Tips :.

1- 味噌不宜受熱太耐否則香味就會失去, 所以要預先溶掉於熱水中, 這樣做會較好
2- 茄子直接用汁料去炆煮, 更入味, 比油炸更健康
3- 約嫌汁料太杰, 可以再加多點水

1- It is better to dissolve the miso paste in a hot water in advance then cooking it directly.
2- Simmer the eggplants with the sauce mixture is way better than deep fried it.
3- Add more water in the sauce mixture if you prefer to have more sauce.
