[自創食譜]香脆三文燴豆豆 (Pan-fried salmon cubes with baked bean)

茄汁豆真係好平凡嘅材料, 價格唔貴, 係云云罐頭食品當中, 它算是較有營養的, 有時我都會買2-3罐在家看門口, 必要時就可以拿來吃
 
不過雖然佢味道唔錯, 但就咁食, 唔知點解, 總覺得好濟咁, 好次食少少就唔算再食呀, 所以我好少會就咁食, 好次今次咁, 簡簡單單加個三文魚丁, 醒胃又好好味呀
 
如果買唔到三文, 用其他魚柳一樣得, 甚至用鯪魚滑, 魚蛋, 魚腐都一樣好好味的, 有機會就試下, 又快又易又好味道, 呵呵
 

.: 材料 Ingredients :.

Group A
1- 三文魚柳400克, 切丁(400g of Salmon fillet, cut into small cubes)
2- 洋蔥半個, 去衣切粒 (1/2 onion, peeled, diced)
3- 青紅椒各半個, 去核切粒 (Half of red and green bell pepper, core removed, diced)
4- 蒜蓉1湯匙 (1 tbsp of minced garlic)
5- 麵粉或粟粉3湯匙 (3 tbsp of flour or corn starch)
6- 熟芝麻1湯匙 (1 tbsp of baked sesame seeds)
Group B
1- 黑椒粉1茶匙(1 tsp of black pepper flake)
2- 鹽1/2茶匙 (1/2  tsp of salt)

.: 汁料 Sauce mixture :.

1- 茄汁焗豆1罐 (1 cane of baked bean)
2- 熱水1/2杯左右 (1/2 cup of hot water)
3- 糖1/2茶匙 (1/2  tsp of sugar) 

.: 做法 Steps :.


1-  將三文魚和Group B 材料撈勻醃15分鐘,  然後三文兩面撲上麵粉, 易潔鑊中大火落2湯匙油起鑊, 將三文四面煎至微黃, 轉中火再煎至金黃, 隔油備用

Marinade the salmon with Group B ingredient for 15 minutes.  Coat both side of the salmon with flour.  Heat the pan with 1 tbsp of oil over medium-high heat.  Pan-fry the fish until all sides are light brown.  Turn the heat to medium.  Continue pan-fry the fish until golden.  Dish it up and put it aside.


2-  中快火落油1/2湯匙起鑊, 落蒜茸, 洋蔥加1/3茶匙鹽炒至軟身, 再加青紅椒炒香(約1分鐘)

Heat the non-sticky pan with 1/2 tbsp of oil over medium-high heat.  Add in the garlic and onion with 1/3 tsp of salt , and stir-fry until the onion is soft (about 2 minutes).  Add in the bell peppers, and stir-fry the ingredients until fragrant (about 1 minutes).

3-  加汁料轉中火煮滾, 調好味

Turn the heat to medium.  Add in the sauce mixture and bring it to boil. 


4-  加入三文魚兜勻上碟, 灑上芝麻即成

Add in the salmon cubes and mix it well.  Dish it up.  Top it with sesame seeds and serve it in hot.
 

.:小提示 Tips :.

1- 煎魚要耐心一點, 煎好一面才好反去另一面煎, 如果不斷翻動, 魚就好容易弄散
2- 三文魚最好煎至9成熟, 因為全熟的話, 餘熱會令魚身過老
3- 約嫌汁料太杰, 可以再加多點水

1- Do not turn the fish before one side is brown.
2- Do not overcook the fish.  It is recommended to cook it to 90% done.
3- Add more water in the sauce mixture if you prefer to have more sauce.
