[自創食譜]酸甜三文脆魚丁 (Salmon cubes in fresh tomato sauce)

以前煮蕃茄, 成日都加茄汁, 其實真係好唔自然, 其實茄汁加了好多其他材料, 有糖, 有醋等等, 味道其實好霸道的, 反而蓋過蕃茄嘅鮮味
 
不過煮蕃茄汁都好需要靚蕃茄, 有些蕃茄真係炆極都無咩味, 咁唔加茄汁都唔得, 如果蕃茄靚嘅話, 炆10-15分鐘等啲蕃茄溶化, 蕃茄汁就已經好好味, 唔需要特別再處理
 
香港或者唔容易買到三文魚扒的話, 可以改用其他無骨魚柳, 一樣好好味的
 
 

.: 材料 Ingredients :.

Group A
1- 三文魚柳400克, 切丁(400g of Salmon fillet, cut into small cubes)
2- 洋蔥半個, 去衣切件 (1/2 onion, peeled, cut into pieces)
3- 青蔥2湯匙 (2 tbsp of minced green onion)
4- 中蕃茄2個, 約200克, 切件 (200g of medium tomato, cut into pieces)
5- 蒜蓉1湯匙 (1 tbsp of minced garlic)
6- 新鮮芫茜粒1湯匙 (1 tbsp of fresh minced coriander)
7- 麵粉或粟粉3湯匙 (3 tbsp of flour or corn starch)
Group B
1- 黑椒粉1茶匙(1 tsp of black pepper flake)
2- 鹽1/2茶匙 (1/2  tsp of salt)

.: 汁料 Sauce mixture :.
[份量只供參考 (just for reference only)]

1- 鹽1/3茶匙(1/3 tsp of salt)
2- 熱水1/2杯約100毫升 (100ml of hot water)
3- 片糖 1/2片, 約10克 (10g of slab sugar or 3 tbsp of raw brown sugar)

.:做法 Steps :.


1- 
將三文魚和Group B 材料撈勻醃15分鐘,  然後三文兩面撲上麵粉, 易潔鑊中大火落2湯匙油起鑊, 將三文四面煎至微黃, 轉中火再煎至金黃, 隔油備用

Marinade the salmon with Group B ingredient for 15 minutes.  Coat both side of the salmon with flour.  Heat the pan with 1 tbsp of oil over medium-high heat.  Pan-fry the fish until all sides are light brown.  Turn the heat to medium.  Continue pan-fry the fish until golden.  Dish it up and put it aside

2- 
中快火落油1湯匙起鑊, 落蒜茸, 青蔥, 洋蔥加1/3茶匙鹽炒至軟身, 再加芫茜, 蕃茄和1/3茶匙糖至軟身

Heat the non-sticky pan with 1 tbsp of oil over medium-high heat.  Add in the garlic, green onion and onion with 1/3 tsp of salt , and stir-fry until soft (about 2 minutes).
  Add in the coriander, tomato with 1/3 tsp of sugar, and stir-fry the ingredients until tomato is soft (about 2 minutes).   

3-  加汁料煮滾, 轉中火, 蓋頂炆10分鐘, 調好味, 加入三文魚兜勻上碟即成

Add in the sauce mixture and bring it to boil.  Turn the heat to medium.  Cover and simmer for 10 minutes.  Adjust the taste accordingly.  Add in the salmon cubes and mix it well.  Dish it up and serve it in hot.

.:小提示 Tips :.

1- 煎魚要耐心一點, 煎好一面才好反去另一面煎, 如果不斷翻動, 魚就好容易弄散
2- 三文魚最好煎至9成熟, 因為全熟的話, 餘熱會令魚身過老
3- 由於蕃茄味道不一, 汁料炆好要記得試味, 要酸的, 加點鹽, 要甜的, 加點糖, 要杰的話, 就加生粉水埋獻抽

1- Do not turn the fish before one side is brown.
2- Do not overcook the fish.  It is recommended to cook it to 90% done.
3- Adjust the taste at the end.  Add salt to make it sour.  Add sugar to make it sweet.  Add corn starch mixture to thicken the sauce if needed.
