[自創食譜]甜茄豬豬愛粉腸 (Pork with rice noodle rolls in tomato sauce)

未試過吃超市買的新鮮腸粉, 回家才發現一盒的份量太多了, 煎香吃過後, 剩下不少, 我不想浪費, 於是便用來作今天和大家分享的菜色
 
煎香的腸粉, 香脆但味道清淡, 用來配蕃茄醬就最好不過, 我用的是蕃茄湯, 因為我有太多蕃茄湯, 再唔用真係唔知點處理好, 大家唔喜歡的話, 可以改用超市買到意大利蕃茄醬, 或者用我之前於三文魚丁介紹的天然蕃茄汁也是可以的
 
車厘茄記得唔好煮大耐, 熱熱地, 放入口爆出香甜蕃茄汁, 真係好好味, 茄汁酸甜開胃, 腸粉香脆, 再加埋豬扒, 包你食到停唔到口, 記得試試啦 
 

.: 材料 Ingredients :.

1- 無骨豬扒350克, 切條 (350g of boneless pork chop, sliced)
2- 洋蔥半個, 去衣切件 (1/2 onion, peeled, cut into piece)
3- 蒜蓉1湯匙 (1 tbsp of minced garlic)
4- 青椒半個,  切件 (1/2 of Green bell pepper, cut into piece)
5- 車厘茄150克 (150g of cherry tomato)
6- 腸粉200-250克(約8-10條) (200-250g of rice noodle roll)http://tonykarenkitchen.com/ 

.: 汁料 Sauce Mixture :.

1- 金寶蕃茄濃湯2/3罐 (2/3 cane of Campbell tomato soup paste)
2- 熱水150毫升 (150ml of hot water)http://tonykarenkitchen.com/ 

.:做法 Steps :.


1- 
豬扒條用"通少中式醃肉法"醃15分鐘備用, 同時, 易潔鑊中火落油約1/2湯匙起鑊, 將腸粉煎至兩面香脆, 上碟備用 
 
Marinade the pork with "Tony marinade method" for 15 minutes.  Meanwhile, heat the pan with 1/2 tsp of oil over medium heat.  Pan-fry the rice noodle rolls until both side is crispy.  Dish it up and put it aside.


2- 
易潔鑊再用中大火落油約1/2湯匙起鑊, 加入豬扒條炒熟, 盛起隔油備用

Heat the non-sticky pan with 1/2 tbsp of oil over medium high heat. Stir fry the pork chops until they are fully cooked.  Put it into a sieve over a bowl and set it aside.
  

3- 易潔鑊洗淨, 中大火落油約1/2湯匙起鑊, 落蒜蓉和洋蔥連1/3茶匙鹽炒至軟身 (約1分鐘), 再加入青椒兜勻炒香(約2分鐘) 
    
Clean the pan.  Re-heat the pan with 1/2 tbsp of oil over medium high heat.  Add in minced garlic and the onion with 1/3 tsp of salt.  Stir-fry all the ingredients until the onion is soft (about 1 minutes).  Add in the green pepper and continue stir-fry it for 2 minutes


4-  加入汁了煮滾, 加入車厘茄和豬扒條兜勻, 橄欖菜和xo醬兜勻
即成

Add in the cooked ingredients from step 2 and mix it well.  Turn off the heat.  Add in the pickled olive and xo sauce.  Mix it well and dish it up.  Serve it in hot.
 

.:小提示 Tips :.

1- 新鮮腸粉煎時會黏在一起, 要小心將它們分開, 以免將它們整爛
2- 車厘茄不能煮太耐, 否則會爆開和起皺紋的
3- 豬扒不要選擇太瘦的, 否則會很鞋口

1- Rice noodle roll is sticky while cooking.  Separately gently to avoid break it apart.
2- Do not cook the cherry tomato for long or it will be broken.
3- It is not recommend to use the lean pork chop for this dish.
