[高速自創食譜]鮮紅脆雞柳 (Chicken Stirps in fresh tomato sauce)

準備寫這個食譜時, 我一直在百街超市網頁,
一直再看有沒有急凍的雞手指, 但找了很久都找不到啊, 難到香港是買不到的嗎? 如果你知道那裡有得買, 請告知, 好讓大家都知道呢

這種雞手指在美加真的很普遍的, 懶的時候又不想出外吃飯的話, 我會焗
雞手指伴即食麵,
真的很方便的

今日這個餸都是一樣, 先將雞件焗好, 再煮汁淋上去就得, 15-20分鐘就煮好了, 如果買不到有想自己整的話,
我也提供了一個簡便的方法給大家製造, 你可以製造多一點, 將剩下的放入冰格冷藏, 那要吃時就拿出來直接去焗, 解凍也不需要的

我最近開始用少了茄汁, 我發覺只要用少少時間去煮蕃茄, 味道也是不錯的,
而且更沒有茄汁那種刺喉的那種感覺, 大家也可以試試看呢

Prep 準備: 5 minutes | Cook 烹調: 15 minutes | For 份量: 4 people | Calories 熱量: 1350 (Estimated/ 估計)

材料 Ingredients
1- ** 急凍雞手指8條, 約300克, (300g of frozen chicken breast Strips)

2- 中型紅蕃茄3個 , 切粒 (3 medium beef tomato, diced)

3- 中型洋蔥1個, 去皮切粒 ( 1 medium onion, peeled, diced)

4- 蒜蓉1湯匙 (1 tbsp minced garlic)

5- 青椒1個, 約250克, 切件 (1 green pepper, cut into pieces)

** 如買不到急凍雞手指, 可以自己製造的:
400克雞柳切件 + 1/2茶匙鹽, 糖撈勻, 準備2隻碟, 一隻載入蛋2隻發勻, 一隻載入2杯麵包糠和1茶匙黑椒粉, 將雞柳
沾蛋漿, 再沾上麵包糠, 放入冰格雪30分鐘即可

** You can make your own chicken strip if you cannot get one from the supermarket
400g of chicken fillet, cut into large pieces.  Marinade with 1/2 tsp of salt and sugar.  Blend 2 egg in one dish.  Put the 2 cup of breadcrumb with 1 tsp of black pepper.  Coat evenly the chicken strip with the blended egg.  Coat it evenly with the breadcrumb.  Put into the freezer for 30 minutes.

汁料 Sauce mixture
份量只供參考 (just for reference only)

1- 第戒市芥辣2湯匙 (2 tbsp of Dijon mustard)

2- 糖1/2湯匙 (1/2 tbsp of sugar)

3- 熱水150毫升 (150ml of hot water)

4- 鹽1/2茶匙 (1/2 tsp of salt)

埋獻 Thickening
1- 生粉水(2湯匙生粉+1湯匙水) (Corn starch mixture (2 tbsp corn starch + 1 tbsp of water)
做法 Steps


1- 柳先用攝氏190度焗15-20分鐘

2- 於雞件焗好前10分鐘, 用易潔鑊, 快火落油約1/2湯匙起鑊, 先落蒜茸炒至金黃, 加入洋蔥和1/3茶匙鹽炒至軟身(圖1), 再加青椒和蕃茄連1/3茶匙糖兜勻, 炒約1分鐘, 再加汁料煮滾, 轉中慢火, 蓋頂炆10分鐘 (圖2), 然後先調教好味道, 逐少加入生粉水, 一面攪拌至杰度適中, 最後加入已焗好的雞件兜勻, 熄火上碟即成

1- Baked the chicken with 190 Celsius for 15-20 minutes.

2-  10 minutes before the chicken is done, heat the non-sticky pan with 1/2 tbsp of oil over high heat.  Stir fry garlic until golden and fragrant.  Stir in the onion with 1/3 tsp of salt.  Stir fry the onion until soft (fig.1).  Stir fry the peppers, tomato with 1/3 tsp of sugar, and mix it well (about 1 minute).  Stir in the sauce mix and heat through (fig.3).  Turn the heat to medium low.  Cover and simmer for 10 minutes (fig.2).  Taste the sauce and adjust the taste accordingly.  Stir in 1 tbsp of corn starch mixture at a time until the sauce is thicken.  Stir in the baked chicken and mix it well.  Dish it up and serve it in hot.

貼士 Tips
1- 汁料主要以新鮮和原味為主, 比用茄汁更清新有益, 但如果味道太淡的話, 那就加1-2湯匙茄汁增加味道

2- 雞柳不易焗太耐, 否則就會好易老, 如果沒有經驗, 可以建議煮多一條作驗板, 焗了約13分鐘左右就拿出來切開看看, 如果入面很凍及未轉色, 則需要將溫度增加, 焗多8分鐘再看看, 如果已經轉白, 就不要再焗了

1- The sauce should taste natural and fresh.  Only add 1-2 tbsp of ketchup if the taste is too light for you.

2- Do not overcook the chicken or it will be dry.  You can cook 1 additional chicken strip as your sample.  Cut it into half and check after 13 minutes of baking.  If it is still cold or pink, then increase the oven temperature and bake 8 minutes more.  If it turns white or warm, it is ready to serve.
