[自創食譜]鮮茄魚腐 (Fish tofu in fresh tomato sauce)



通少好介紹: 鮮茄魚腐 (Fish tofu in fresh tomato sauce)
呵呵, 過多幾天, 我就會消失一個星期了,
我要好好的放一個星期假呢, 真的, 好想好想輕輕鬆鬆休息幾天

另我, 我第二本的食譜已經製作中,
好希望今年能於書展中面世, 等大家容易啲買到, 今次會有抽獎,
獎品等我遲啲公報, 呵呵

今日出個超簡單既餸比大家, 我用了大家通常用來火鍋的魚腐作主材料,
由於它不用再醃製, 所以烹飪時間可以好短, 在加上鮮茄的味道, 包大家越吃越開胃呢

Prep 準備: 10 minutes | Cook 烹調: 10 minutes | For 份量: 4 people | Calories 熱量: 950 (Estimated/ 估計)

材料 Ingredients
1- 魚腐400克左右 (400g of fish tofu)

2- 中型洋蔥半個, 去衣切粒 (1/2 medium onion, diced)

3- 蒜蓉1湯匙 (1 tbsp minced garlic)

4- 蕃茄(牛茄)3個, 切件 (3 beef tomato, cut into pieces)

汁料 Sauce mixture
份量只供參考 (just for reference only)

1- 熱水2/3杯 (150 ml of hot water)

2- 糖1/2湯匙 (1/2 tbsp of sugar)

3- 老抽1湯匙 (1 tbsp of black soya sauce)


做法 Steps


1- 魚腐放入滾水中煮3分鐘, 用凍水洗淨, 隔水備用(圖1)

2- 易潔鑊用快火落油約1/2湯匙起鑊, 先將蒜頭炒香至微黃, 再加入洋蔥和1/3茶匙鹽和炒至軟身(圖2), 再加入蕃茄和1/2湯匙糖炒軟(圖3), 加入汁料兜勻煮滾, 加入魚腐, 轉中慢火, 蓋頂炆10分鐘(圖4), 上碟即成

1- Blanch the fish tofu in boiling water for 3 minutes.  Rinse it under the cold water and clean it well.  Drain it in a sieve over a bowl and put it aside (fig.1).

2-  Heat the non-sticky pan with 1/2 tbsp of oil over high heat.  Pan-fry the garlic until it is light brown and fragrant.  Stir in the onion with 1 tsp of salt.  Stir fry it until soft (fig.2).  Stir in the tomato with 1 tbsp of sugar.  Stir fry it until soft (fig.3).  Stir in the sauce mixture and heat through.  Stir in the fish tofu.  Turn the heat to medium to low.  Cover and simmer it for 10 minutes.  Dish it up and serve it in hot..

貼士 Tips
1- 蕃茄需要時間去釋出它點味道, 慢火去炆它雖然時間較長, 但味道最鮮, 比加茄汁味道更好

2- 如果厭魚腐太單調, 更可以加入其他海鮮, 例如蟹柳, 蝦仁等等也可以, 但烹調時間則會加長

3- 蕃茄的甜酸味道不一樣的, 所以最後一定要試味, 如果太酸則加糖, 如果太甜可以加點鹽增加它的酸味

1- It is better to simmer the tomato instead of adding ketchup in the sauce mixture.  The sauce will tastes fresh and natural

2- You can add imitated crab meat, shrimps to enrich the ingredients.

3- Every tomato will taste differently.  Make sure you taste the sauce before serve.  Add more sugar if it is too sour or add more salt if it is too sweet.
