[自創食譜]蓮藕肉丸粒粒香 (Diced lotus roots with meat ball in abalone sauce)



通少好介紹: 蓮藕肉丸粒粒香 (Diced lotus roots with meat ball in abalone sauce)

放了一個星期假,
反而比唔放假前更加疲累, 旅行時也不覺得有任何問題的, 但一回到加中就四肢無力咁, 甚麼都不想做, 哈哈, 這可能是放假後遺證

這個星期我會努力寫多一點食譜,
因為實在有很多新食譜排隊等待出世呢, 哈哈, 大家記得有時間就抽點時間回來看看啊

而我第二本食譜應該趕得切書展前面世呢,
我剛看了初稿, 感覺比我第一本還要好, 而且今次我有神秘禮品給大家抽獎的, 詳細就遲些再公報

今天我這個餸用了鮑汁, 可以話第一次用, 我覺得味道都唔錯, 但又唔會覺得特別好味, 我
覺得個味道沒有蠔油咁大路, 又或者材料配合得唔夠好啦, 大家試完, 再話我知你對鮑汁既意見啦

Prep 準備: 10 minutes | Cook 烹調: 15 minutes | For 份量: 4 people | Calories 熱量: 1150 (Estimated/ 估計)

材料 Ingredients
1- 牛肉丸350克左右 (350g of beef balls)

2- 中型洋蔥半個, 去衣切粒 (1/2 medium onion, diced)

3- 蒜蓉1湯匙 (1 tbsp minced garlic)

4- 青椒1個, 切粒 (1 green pepper, diced)

5- 豆腐300克左右, 切粒 (300g of tofu, diced)

6- 蓮藕300克左右, 去皮, 切粒 (300g of lotus roots, peeled, diced)

汁料 Sauce mixture
份量只供參考 (just for reference only)

1- 熱水1/4杯 (50 ml of hot water)
tonytsang and kareny recipy
2- 糖1/2湯匙 (1/2 tbsp of sugar)

3- 老抽1/2茶匙 (1/2 tsp of black soya sauce)

4- 鮑魚汁2湯匙 (2 tbsp of abalone sauce)

做法 Steps


1- 豆腐粒和蓮藕粒放入滾水中煮5分鐘 (圖1), 隔水備用

2- 易潔 鑊用快火落油約1/2湯匙起鑊, 先將加入蒜頭, 洋蔥和1/3茶匙鹽和炒至軟身(圖2), 再加入青椒粒和肉丸兜勻炒透 (約3分鐘) (圖3), 加入豆腐, 蓮藕粒和汁料兜勻煮滾(圖4), 轉中慢火, 蓋頂炆3分鐘, 上碟即成

1- Blanch the tofu and lotus roots for 3 minutes (fig.1).  Drain it in a sieve over a bowl and put it aside.

2-  Heat the non-sticky pan with 1/2 tbsp of oil over high heat.  Pan-fry the garlic, the onion with 1 tsp of salt.  Stir fry it until the onion is soft (fig.2).  Stir in the green pepper and beef ball.  Continue stir-fry it until it is cooked through (about 3 minutes) (fig.3).  Stir in the tofu and lotus roots, sauce mixture and heat it through (fig.4).  Turn the heat to medium to low.  Cover and simmer it for 3 minutes.  Dish it up and serve it in hot.

貼士 Tips
1- 牛丸可以改用其他肉丸代替, 如果不是新鮮的話, 可以用熱水煮2-3分鐘, 再洗淨就可以去掉雪味

2- 不用鮑魚汁可以改用蠔油代替, 不同牌子的汁了鹹度都不同, 建議先加1湯匙試好味, 如果不夠味才加多1湯匙

3- 豆腐不要用滑豆腐因為它大軟熟, 不宜炒動, 用布包豆腐那種就可以了

1- You can replace the beef ball with other type of meat balls as per your preference. If the beef balls is not fresh made from the market, it is recommended  to blanch it for 2-3 minutes.

2- You can replace abalone sauce with oyster sauce.  As different brand of sauce will have different saltiness level, make sure you taste the sauce and adjust it accordingly.

3- It is recommend to use a firm tofu instead of soft tofu
