[自創食譜]香芒蝦皇 (Creamy mango shrimps)

出埋今個食譜, 我
會同太太去多倫多幾天, 探下朋友休息一下, 我有個奇怪的要求, 如果在多倫多的朋友在街上碰到我,
可否和我打個招呼, 其實我很想認識大家的, 只是時間有限, 希望大家不要見怪呢

今日用了鮮芒果汁和蛋黃醬, 味道酸酸甜甜,
非常醒胃的, 但大家別用錯奇妙醬,
因為味道不及蛋黃醬外, 還會非常酸的, 所以大家要注意了

這個餸易煮又好味道, 適合一家大細享用, 希望
大家會試一下, 再回來給我意見, 好嗎?

材料 Ingredients
1- 中蝦400克左右, 去殼 (400g of shrimps, shell removed)

2- 洋蔥1個, 去衣切件 (11 onion, peeled, cut into pieces)

3- 蒜蓉 1湯匙 (1 tbsp chopped garlic)

4- 紅椒1個, 切件 (1 red pepper, cut into pieces)

5- 芒果300 克, 去皮切粒 (300g of mango, peeled, diced)

汁料 Sauce
份量只 供參考 (just for reference only)

1- 芒果汁100毫升 (100ml Mango Juice)

2- 砂糖1湯匙 (1 tbsp sugar)

3- 蛋黃醬2湯匙 (2 tsp Mayonnaise)

4- 生粉1湯匙 (1 tbsp corn starch)
做法 Steps


1- 先將蝦用1/2茶匙鹽, 白胡椒粉和生粉醃15分鐘, 用易潔鑊, 快火落1/2湯匙油起鑊, 將蝦炒熟, 上碟備用(圖2)

2-易潔鑊洗淨抹乾, 用快火落約1湯匙油起鑊, 落蒜頭炒至微黃, 加入洋蔥和1/3茶匙鹽炒至軟身(約2分鐘), 再加入紅椒炒透(約2分鐘)(圖1), 加入中蝦兜勻(圖3), 加入汁料煮滾至杰身(圖4), 熄火, 加入芒果粒炒勻, 上碟即可享用

1- Marinade the shrimps with 1/2 tsp of salt, white pepper and corn starch for 15 minutesHeat the non-sticky pan with 1/2 tbsp of oil over high heat.  Stir in the shrimps and stir fry it until done (fig.2).  Put it aside.

2- Clean the non-sticky pan and dry it well.  Heat the non-sticky pan with 1 tbsp of oil over high heat again.  Stir fry the garlic until lightly brown.  Stir in the onion with 1/3 tsp of salt.  Stir-fry the onion until soft (about 2 minutes).  Stir in the red pepper.  Stir-fry it and heat it through (about 2 minutes) (fig.1).  Stir in the shrimps and mix it well (fig.3).  Add in the sauce mixture.  Heat it through the sauce is thickened (fig.4).  Turn the heat off.  Add in the mango and mix it well.  Dish it up and serve it in hot.

貼士 Tips
1- 新鮮蝦其實很難把它的殼脫去, 一定要急凍, 讓它凍死殼才會容易脫去的, 所以用急凍蝦就會比較方便

2- 蝦肉當用鹽醃過, 就會抽去它一點的水份, 令它可以更加爽口, 用生粉去洗能令蝦更白, 更乾淨, 記得要去腸

3- 汁料中的生粉可以分開下鑊的, 可以用1-2湯匙水混合生粉, 再逐少加入至杰身即可

1- It is hard to remove the shrimps' shell if it is live and fresh.  It is better to freeze it until it die.  Once the shrimp is dead, the shell will be easy to remove.  In that case, frozen shrimps maybe more convenience

2- Marinade the shrimps with salt will make the shrimps' texture more firm.  Clean it with corn starch will bleach the shrimps.

3- Corn starch can mixed with 1-2 tbsp of cold water and add it separately.
