[自創食譜]柚子香骨 (Baked spare ribs in citron & barbecue sauce)

f非常忙呀, 因為無買這個星期的早餐, 所以我晚上9點幾, 都要立即整戚風蛋糕呀, 到現在才有時間寫blog

但真的沒有心情寫我的日誌, 留待下次吧, 出面現在行雷閃電, 我好想看閃電呀,
好啦, 這個餸真的超好味道的, 雖然沒有時間介紹, 但你一試就會讚不絕口, 真的要好好試下呀

Prep 準備: 40 minutes | Cook 烹調: 40 minutes | For 份量: 4 people | Calories 熱量: 1350 (Estimated/ 估計)

材料 Ingredients
1- 一字腩排骨1磅半左右 (650g of Spare ribs)

2- 洋蔥半個, 去衣切絲 (1/2 onion, peeled, sliced)

3- 蒜蓉1湯匙 (1 tbsp chopped garlic)

4- 麵粉或生粉1/2杯, 100克 (1/2 cup of flour or corn starch)

5- 韓國柚子茶醬 2湯匙 (2 tbsp of korean citron tea paste)

4- 生粉2湯匙 (2 tbsp of corn starch)

5- 凍水3凍水 (3 tbsp of cold water)

醃料 Seasoning
份量只供參考 (just for reference only)

1- 叉燒醬5湯匙 (5 tbsp of Chinese barbecue sauce)

砂糖1茶匙 (1 tsp of whitesugar )

韓國柚子茶 2湯匙 (2 tbsp of korean citron tea)

凍水30毫升 (30ml of cold water)
做法 Steps


1- 先將排骨洗淨抹乾, 加入醃料醃40分鐘或過夜, 焗爐用攝氏200度預熱, 將醃好的排骨隔好醃料, 平均兩面撲上生粉, 再放上焗盤, 入爐焗30-40分鐘或至全熟, 上碟備用

2-易潔鑊快火落油約1湯匙再起鑊, 加入蒜蓉 和洋蔥及1/3茶匙鹽炒至軟身(圖1)再加入醃排骨的醃料煮滾(圖2), 轉中慢火, 粟粉加凍水攪勻至無粒, 再混入韓國柚子茶醬, 然後逐少加入汁料中至杰身, 淋上排骨, 即可享用

1- Clean the spare ribs and drain it well.  Marinade the ribs with the seasoning for 40 minutes or over night.  Preheat the oven with 200 Celsius degree.  Drain well the marinaded ribs and coat evenly each side with the flour.  Put them on a baking rack.  Grill 30-40 minutes in the oven or until done.  Dish it up and put it aside.

2- Heat the non-sticky pan with 1 tbsp of oil over high heat again.  Stir fry the garlic and the onion with 1/3 tsp of salt until soft (fig2).  Add in the seasoning mixture used to marinade the ribs and bring it to boil (fig.2).  Turn the the heat to medium.  Mix the corn starch,  Korean citron tea paste, and cold water together.  Add into the sauce mixture until the sauce is thickened.  Pour the sauce over the ribs  and serve it in hot.

貼士 Tips
1- 排骨要鬆化必定要夠肥, 否則用瘦的排骨, 那要煮得好真的有點困難

2- 所有有骨的肉類, 最好醃過夜才能醃得入味

3- 柚子味道清香,  在煮汁時再加1湯匙就能為了加強它的香味

1- It is better to choose a ribs that has fat.  Using the lean ribs is hard to make it soft

2- It is recommended to marinade every meat with bone overnight.

3- Citron has a light natural flavor.  Add 1 extra tbsp into sauce mix can enhance it flavor

  4. 通少,你好呀!! 其實我睇左你個blog好耐,不過一直都無留言 我覺得你真係好有心機,煮完重有慢慢打d食譜出來,(其實打食譜都幾煩)又好細心解答問題,所以真係好欣賞你咁無私,願意同我地分享!! 我第一次整野食都係因為你食譜寫得好清楚又易明白先開始整^^所以真係要多謝你!! 你哩個柚子香骨我好想整,不過 叉燒醬可唔可以用蜜汁蒜香骨醬?唔該你!

  5. 屋企冇焗爐, 可否同樣方法做豬扒?

    再加入醃排骨的醃料煮滾(圖2), <----係咪即係有叉燒醬果堆呀?
    3- 柚子味道清香,  在煮汁時再加1湯匙就能為了加強它的香味<-----但我見你上便係4 湯匙?
    我今晚要試煮喇!!
