[自創食譜]香艷魚柳 (Crispy fish finger in spicy and sour sauce)


通少好介紹: 香艷魚柳 (Crispy fish finger in spicy and sour sauce)

昨天回看以前寫過的食譜, 發現有些食譜步驟仍是未夠完善, 我打算將一些以前寫過但做得未夠好的再寫多一次, 以免誤導了大家

今天和
大家分享這個很開胃的菜色, 自己製作魚柳
其實唔難, 亦唔需要很多油去炸才香脆的, 我覺得最緊還是大家煎好後, 別疊於一起去隔油, 只要它們有空間散熱, 就會自然很香脆的,
再加上這個汁酸酸辣辣, 包你吃兩大碗飯呢

Prep 準備: 15 minutes | Cook 烹調: 20 minutes | For 份量: 4 people | Calories 熱量: 1050 (Estimated/ 估計)
材料 Ingredients
1- 急凍龍利魚柳約350克, 切件 (350g of frozen fillet of sole, cut into pieces)

2- 洋蔥半個, 去衣切件 (1/2 onion, peeled, cut into pieces)

青椒1個, 切件 (1 green pepper, cut into pieces)

4- 蒜蓉 1湯匙 (1 tbsp chopped garlic)

5- 蕃茄2個, 切件 (2 tomato, cut into piece)

6- 麵粉或生粉1/2杯, 100克 (1/2 cup of flour or corn starch)
汁料 Sauce
份量只供參考 (just for reference only)
1- 茄汁約3湯匙 (3 tbsp Ketchup)

2- 熱水1/4杯 (50 ml of hot water)

喼汁1湯匙 (1 tbsp of L&P Worcestershire sauce)

糖1湯匙 (2 tbsp of sugar)
做法 Steps

1- 先將魚塊抹乾, 用1/2茶匙鹽, 白胡椒粉醃10分鐘, 易潔鑊快火落油1湯匙起鑊, 再加麵粉或生粉薄薄包好, 快火落油(約1/4杯)起鑊, 將魚煎至兩面微黃, 轉中火煮至全熟, 盛起隔油備用(圖1)

2- 易潔鑊洗淨抹乾, 再用快火落油約1湯匙再起鑊, 加入蒜蓉和洋蔥及1/3茶匙鹽炒至軟身(圖2), 加入蕃茄和1/3茶匙糖炒至軟身, 再加入青椒兜勻炒透(約2分鐘) (圖2), 加汁煮滾調好味道, 熄火, 加入魚塊兜勻上碟即成

1- Dry the fish well.  Marinade the 1/2 tsp of white pepper and salt for 10 minutes.  Coat the fish with flour or corn starch lightly.  Heat the pan with 1/4 cup of oil over high heat.  Fry the fish until both side is golden and well done.  Put it aside and drain it well (fig.1).

2- Clean non-sticky pan and dry it well.  Heat the non-sticky pan with 1 tbsp of oil over high heat again.  Stir fry the garlic and the onion with 1/3 tsp of salt until soft.  Stir in the tomato with 1/3 tsp of sugar until soft.  Stir in the green pepper and heat it through (for about 2 minutes) (fig.2).  Stir in the sauce and heat through (fig.4)Turn the heat off.  Stir in the fish and mix it wellDish it up and serve it in hot.

貼士 Tips
1- 煎魚一定要有耐性, 用生粉包好, 當一面煎得金黃時, 就能瑣煮魚肉, 令它不易散開, 這時才可以反動魚塊, 否則反太多的話, 好容易就散開晒了

2- 汁料用的水份一定要小心處理, 要先加少少先看看是否夠味道, 否則一下太多味道就會變得太淡, 不好味了, 如果不夠杰的話, 就要加點生粉水呢

3- 煎完魚後, 將它們分開隔油, 盡量避免重疊於一起, 否則被壓在下面的魚塊就會太濕, 變得不香脆了

1- Be patience to pan fry the fish.  Coat the fish with corn starch and pan fry one side until brown.  It will help to hold the fish together.  Then you can flip it over and pan fry the other side.  If you flip too often at the beginning, fish will break easily.

2- Do not add the water in one shot.  Add a bit and taste it.  Add more if the taste is too strong.  If the sauce is not thickened enough, you can add some corn starch mixture.

3- Try to separate the fish after pan-fry it.  Otherwise, the pieces covered by other pieces will be too moist and it won't be crispy.

  5. 你好啊!  我追左你個BLOG都一段日子, 多謝你放咁多食譜! 我有D問題想請教, 我想請問康寧㷛有幾條LINE,我見你好似係用STOVETOP個款, 其實VISIONS透明個隻好似好多功能, OVEN, STOVE 都用得,你覺得如何? 我初到TORONTO要買D  OVEN用的COOKWARE, 又要炆得的煲, 我知康寧好, 但好多款, 心大心細, 唔知邊款好,而我的$又唔多, 可否比一些意見? THANKS A LOT Alice
    [版主回覆02/11/2011 22:47:00]你好alice 其實我所知都有限, 你聽完當係參考, 唔好真係聽晒我講, 因為我都可能有錯的 vision 我無用過, 所以唔知, 但係有隻係叫 creuset 嘅鐵煲, 聽聞能焗能炆, 不過較貴同不易清理的 我用康寧通常只用來炆野, 不會放入焗爐, 好處是比較平, 容易清洗, 又輕 其實仲有好多唔同牌子, 要視乎你要做甚麼

    如果我想買D 焗CAKE, 炆肉, 烤肉的用具 且價錢相宜的, 你有冇介紹呢??
     
    [版主回覆02/11/2011 23:33:00]你住toronto的, 可以多留意canadiantire 減價品, 例如creuset 的鐵煲, canadiantire (簡稱CT), 有kitchenaid 牌子的, 只需100$左右, 有時會減到60$, 分別是, creuset是入口的法國貨, 所以貴, kichenaid係美國貨, 所以平 D 焗CAKE, 都係ct, 或wal-mart, zeller 買好啲, 等佢減價先, 由於你說你是新手, 焗cake最好買8吋以下的size, 唔洗一次過整咁多, 衰左就好徙料, 哈哈哈 炆肉, 烤肉的用具有很多不同的種類的, 不過ct, wal-mart, zeller都是有得買的, 炆肉平平地可以買個slow cooker呀, 朝早炆, 放工就吃得, 又安全 烤肉最緊要有個焗爐, 焗架等等就ok, 唔需要太靚, 我覺得最緊要是可以入焗爐的溫度計, 留意ct, 平起上來, 24元的會減至10$的, 有了它, 焗咩都會好perfect, 實唔會焗唔熟或焗過龍 你如果想整cake, 記得要買啲磅同量杯, 量匙, 哩啲唔慳得的, 差少少出來的味道質感會差很多的

  8. Siu Ching: CREUSET 係好貴,你可以睇吓有無其他 brand ~好似 Mario Batali、Racheal Ray (雖然我唔係幾鍾意佢)等都有出廚具產品,你可以睇睇( Bed Bath & Beyond, Crate&Barrel 等) 我响 Sam's Club 買咗個" A 貨" 6Qt Dutch oven ,因為減價只係 USD20 都勁好用(雖然勁重)~兩個 cast iron pans 就响 Target 買既,約 USD25 一個。 希望你好快買到個啦~
    平時行多D廚具部會發現好多好野架~~~

    更引用了你清湯腩的食譜為個煲”剪綵”,
    但唔知係唔係佢比較保温,
    做唔到冷縮熱脹的效果,炆左好耐都唔淋?!
    [版主回覆02/17/2011 05:16:00]勁呀, 全部都係好價錢, 記得有機會就買埋個肉類溫度計就perfect 牛腩都要肥少少先會腩呀, 你個煲好存熱的, 所以即使離火, 都應該會好熱, 做唔到冷縮熱漲, 可以做得, 就係滾完15分鐘左右, 熄火, 離開爐頭, 打開蓋, 等佢凍, 之後先再滾返, 唔需要做好多次, 兩次都應該夠啦 (因為凍嘅時間長左, 炆時間又多左喎, 所以唔需要好多次) 你個鐵煲, 記得洗完要抹乾先好呀, 唔係就會有生鏽的可能
