今日很無精神呢,

因為我剛剛傷風了, 喉嚨和鼻子都有點不舒服呢, 可能是前天出外倒垃圾時沒有穿外套的原故 (那晚氣溫只得-9度)

今日和大家分享我最喜歡的西洋茄子,

它和中國的茄子很不同的, 它又肥又大, 而且皮厚肉爽, 用來代替肉類就最好不過

而今次我這個特別醬汁中西合壁, 味道惹味香甜之餘,

更有生果的香味, 我相信大家應該會喜歡的

正所謂: 果醬酸甜加茄子, 中西合璧夠創意

材料 Ingredients
1- 西人茄子350克左右, 切厚片 (350g of western eggplants, sliced into large pieces)

2- 蒜蓉1湯匙 (1 tbsp minced garlic)

3- 洋蔥半個, 去衣切件 (1/2 onion, peeled, cut into pieces)

4- 中蕃茄2個, 切件 (2 beef tomato, cut into pieces)

5- 蒜蓉1湯匙 (1 tbsp minced garlic)

6- 青椒1個, 約150克, 去囊, 切件 (1 green pepper, seed removed, cut into pieces)

7- 粟米仔8條, 切半 (8 baby corns, cut into half)

8- 熟芝麻1湯匙, 非必要 (1 tbsp of baked white sesame seed)

汁料 Sauce
份量只供參考 (just for reference only)
1- 茄汁2湯匙 (2 tbsp of ketchup)

2- 熱水1/2杯, 110毫升 (1/2 cup of hot water, 110ml)

3- 甜麵醬3湯匙 (3 tbsp of Sweet Bean Sauce)

4- 橙味果醬3湯匙 (3 tbsp of orange flavor jam )
做法 Steps

1- 先將茄子用1/3茶匙鹽, 黑椒粉和2湯匙麵粉(或生粉)醃10分鐘 (圖1), 易潔鑊中火落油1湯匙起鑊, 再將茄子炒至金黃及軟身(圖2), 盛起隔油備用

2- 易潔鑊洗淨抹乾, 再用快火落油約1湯匙再起鑊, 加入蒜茸洋蔥及1/3茶匙鹽炒至軟身(圖3), 加入蕃茄及1/3茶匙糖和青椒, 粟米仔兜勻炒透(約2分鐘) (圖4), 加汁(除了果醬)煮滾轉中火 (圖5), 蓋頂焗5分鐘, 再加入果醬和茄子攪勻(圖6), 上碟灑上芝麻即成

1- Marinade the egg plants with 1/3 tsp of salt, black pepper and 2 tbsp of flour (or corn starch) for 10 minutes (fig.1).  Heat the non-sticky pan with 1 tbsp of oil over medium heat.  Pan fry the egg plants until golden and soft (fig.2).  Drain it well and put it aside.

2-  Clean non-sticky pan and dry it well.  Heat the non-sticky pan with 1 tbsp of oil over high heat again.  Stir fry the garlic and the onion with 1/3 tsp of salt until soft (fig.3).  Stir in the tomato with 1/3 tsp of sugar.  Stir in the green pepper and baby corn.  Mix it well and heat it through (for about 2 minutes) (fig.4).  Stir in the sauce (except the jam) and heat through (fig.5).  Turn the heat to medium.  Cover and simmer for 5 minutes.  Stir in the orange jam and egg plant.  Mix it well and heat it through (fig.6). Dish it up.  Top it with sesame seed and serve it in hot.

貼士 Tips
1- 西人茄子和唐人茄子是不同的, 它比較肥大個, 顏色較深的, 煮熟後也不會變得太腍, 咬口比較好

2- 洋蔥加鹽炒的話, 比較容易炒透變軟, 變軟的洋蔥才是熟透那就會甜而不辣的, 蕃茄則需要加糖才會散發出當中的甜味

3- 最後記得要試味, 如果過鹹, 就要加多點糖, 相反, 就需要加多點鹽, 如果太濃的話, 可以加多點水, 再加少少生粉水埋獻 (太白粉水)即可

1- Western eggplants is not the same as chinese eggplant.  It is larger.  Color is deeper.  Texture is stronger.

2- Add salt will make onion easy to cook through.  Once the onion is cook through, it will be sweet.  Tomato needs sugar to release its sweet taste as well.

3- It is recommended to adjust the taste at the end.  If it is too salty, add some sugar accordingly.  On the other hand, if it is too sweet, add some salt.  If overall, the sauce is too strong, add some water, and add some corn starch mixture to thicken the sauce if necessary.
