[通少秘製]通少沙嗲炒牛肉(Stir fry beef with special satai sauce)



夏天餸系列: 通少沙嗲炒牛肉

1- 牛柳1磅左右, 切片 (1 lbs of beef fillet, sliced)

2- 薑片3塊 (3 sliced ginger)

3- 蒜蓉1湯匙 (1 tbsp minced garlic)

4- 芥蘭400克左右, 去尾, 切段 (Chinese Broccoli,stemmed off, sectioned)

汁料 Sauce
份量只供參考 (just for reference only)

1- 沙茶醬2湯匙 (2 tbsp of Chinese style barbecue sauce)

2- 花生醬2湯匙 (
2 tbsp of peanut butter)

3- 水3湯匙 (3 tbsp of water)

4- 冰糖碎30克 (30g of rock sugar)

做法 Steps

1- 先將牛肉用通少中式醃肉法 (除了鹽) 醃15分鐘, 快火落油1湯匙起鑊, 再將牛肉炒至7成熟(圖1), 盛起隔油備用

2- 將鑊洗好抹乾,
快火落約1/2湯匙油起鑊, 加入薑片, 蒜蓉連沙茶醬炒香, 再加入芥蘭1/2茶湯匙鹽和糖炒勻, 再加1/2杯熱水蓋頂焗2分鐘(圖2), 將鑊中的水隔走, 再加入牛肉和汁料兜勻煮滾, 熄火蓋頂焗2分鐘, 上碟即成

1- Marinade the beef with Tony's marinade method (except the salt) for 15 minutes.  Heat the pan with 1 tbsp of oil over high heat.  Stir-fry the beef until 70% done (Fig.1).  Drain it well and put it aside.

2- Clean the pan and dry it well. Heat the pan with some oil over high heat with least 1/2 tbsp of oil. Stir-fry the ginger and garlic with barbecue sauce until fragrant. Stir in the Chinese broccoli with 1/2 tsp of sugar and salt for 2 minutes (fig.2).  Add 1/2 cup of hot water.  Cover and simmer for 2 minutes.  Drain all the water from the pan.  Stir in the beef and sauce mixture.  Mix it well and heat it through.  Turn the heat off.  Cover and simmer it for 2 minutes over medium heat.  Dish it up and serve it in hot.

貼士 Tips
1-
冰糖碎真的很難溶的, 可以預先用1/4杯滾水將冰糖溶化, 加入汁料內即可, 但記得不要再加水, 否則汁料會太稀

2-
香港很難買到香濃惹味的沙茶醬的, 如果大家怕麻煩, 可以用沙嗲醬代替, 但味道當然打了節扣呢

3- 芥蘭建議先浸浸溫水10-15分鐘, 聽聞可以去除菜內的銀

1- You can dissolve the rock sugar in 1/4 cup of boiling water in advance.  Then add it into the sauce.  Remember, if you doing that, do not add the water.

2- It is hard to find a good Chinese barbecue sauce.  To make it more easy, you can replace it with normal satay sauce.  However, the taste will not be as good as you expected.

3- Soak the chinese broccoli in the warm water for 10-15 minutes can remove the iron from the broccoli.
