[自創食譜]: 黃金茄子炆豆腐 (Egg plants and bean curd in salty fish sauce)



夏天餸系列: 通少沙嗲炒牛肉

1- 免治牛肉400克左右 (400g of minced beef)

2- 茄子2-3條, 切件 (2-3 eggplants, cut into pieces)

3- 蒜蓉1湯匙 (1 tbsp minced garlic)

4- 洋蔥半個, 去衣切件 (1/2 onion, peeled, cut into pieces)

5- 紅辣椒粒1/2湯匙 (1/2 tbsp minced )

6- 熟咸蛋3隻去殼, 切粒 (3 cooked salty eggs, shell removed, cut into piece)

7- 炸豆腐4件, 切半 (Fried tofu, cut in half)

8- 生粉水2湯匙 (2 tbsp of corn starch mixture)
汁料 Sauce
份量只供參考 (just for reference only)

1- 老抽1茶匙 (1 tsp of dark soya sauce)

2- 熱水1杯, 220毫升 (1 cup of hot water
)

3- 魚香醬2湯匙 (2 tbsp of chinese spicy garlic sauce)

做法 Steps

1- 先將牛肉用通少中式醃肉法 (除了鹽) 醃15分鐘, 快火落油1湯匙起鑊, 再將牛肉炒至熟(圖1), 盛起隔油備用, 豆腐飛水2分鐘, 隔水備用

2- 將鑊洗好抹乾,
快火落約1/2湯匙油起鑊, 加入蒜蓉, 辣椒和洋蔥連1/3茶匙鹽炒至軟身(圖2), 再加茄子炒2-3分鐘(圖3), 再加牛肉, 鹹蛋粒兜勻炒2分鐘(圖4), 加入豆腐和汁料煮滾(圖5), 中慢火蓋頂焗5分鐘(圖6), 加入適量生粉水兜勻, 上碟即成

1- Marinade the beef with Tony's marinade method (except the salt) for 15 minutes.  Heat the pan with 1 tbsp of oil over high heat.  Stir-fry the beef untildone (Fig.1).  Drain it well and put it aside.  Blanch the tofu for 2 minutes.  Drain it well and put it aside

2- Clean the pan and dry it well. Heat the pan with some oil over high heat with least 1/2 tbsp of oil. Stir-fry the garlic, hot pepper and onion with 1/3 tsp of salt until soft (fig.2). Stir in egg plants and stir-fry for 2-3 minutes (fig.3).  Stir in the beef and egg york and stir-fry for 2 minutes (fig.4).  Stir in the tofu and sauce mix and heat it through (fig.5).  Turn the heat to medium low.  Cover and simmer for 5 minutes (fig.6).  Stir in some corn starch to thicken the sauce.  Dish it up and serve it in hot.

貼士 Tips
1-
茄子唔需要用好多油去炸的, 就咁炒樣外表沾了油就可以了, 之後再加水去焗腍它就可以了, 這樣用的時間比較多, 但比較健康

豆腐買炸好比較方便, 但一定要飛水讓藏在豆腐內的油排出來, 吃起來會比較健康

1- It is not recommended to fry the egg plant.  Just pan fry it with some oil.  Then add water to simmer it until soft.  That way will be healthier.

2- Using the fried tofu from market is more convenience.  But remember blanch the tofu so that the remaining oil can be released out.
