[通少自創] 當孖菇遇上豬柳時 (Pork with Twice mushrooms in butter sauce)



夏天餸系列: 當孖菇遇上豬柳時

1- 豬柳400克左右, 切條 (400g of tenderloin pork, cut into long pieces)

2- 中型洋蔥半個, 去衣切粒 (1/2 medium onion, diced)

3- 蒜蓉1湯匙 (1 tbsp minced garlic)

4- 新鮮白/啡磨菇各8粒, 去蒂 (10 each of white/brown mushroom, stemmed off)

5- 牛油2湯匙 (2 tbsp of butter)

6- 粟米仔8條, 切半 (8 baby corn, cut into half)

7- 乾羅勒碎1湯匙 (1 tbsp of basil flake)

8- 黑椒粉1/2湯匙 (1/2 tbsp of black pepper)

做法 Steps

1- 先將豬肉用通少中式醃肉法 醃15分鐘, 快火落油1湯匙起鑊, 再將豬肉熟(圖1), 盛起隔油備用

2- 將鑊洗好抹乾,
快火落約1/2湯匙油起鑊, 先將蒜頭爆香, 再加入洋蔥和1/3茶匙鹽和炒至軟身(圖2), 再加入粟米仔和豬肉略炒2分鐘(圖3), 再加入牛油, 磨菇, 黑椒粉,羅勒碎, 1/4茶匙鹽和3湯匙熱水兜勻煮滾(圖4), 蓋頂中火焗5分鐘, 上碟即成

1- Marinade the pork with Tony's marinade method for 15 minutes.  Heat the pan with 1 tbsp of oil over high heat.  Stir-fry the beef until done (Fig.1).  Drain it well and put it aside.

2- Clean the pan and dry it well. Heat the pan with some oil over high heat with least 1/2 tbsp of oil. Stir-fry the onion with 1 tsp of salt until soft (Fig.2). Stir in the baby corn and the pork.  Stir fry it for 2 minutes (fig.3).  Stir in butter, mushroom, black pepper, basil flake, 1/4 tsp of salt and 3 tbsp of water. (fig.4).  Mix it well and heat it through.  Cover and simmer it for 5 minutes over medium heat.  Dish it up and serve it in hot.

味道主要來自豬肉, 所以如果要惹味一點, 醃肉時必需重手多一點

1- It will hard to make the zucchini soft if you cut it into large pieces.  Taste it at the end to ensure if it is soft enough for you.  If not, please add 2-3 tbsp of hot water and simmer it for 2-4 minutes..

2- Reduce the portion of marinade seasoning if you don't want it too salty.

  3. 您好, 第一次睇您的BLOG, 菜色簡單易明^^ 好GOOD喎, 謝謝您的分亨~~ 但我剛才想列印食譜時, 原來需要PASSWORD的, 所以我根據您提供的PASSWORD去開喇, 但好可惜佢話我錯PASSWORD...... :'(, 點算吖???
