[自創食譜]: 菠菠趣蝦球 (Special shrimps ball in pineapple sauce)




夏天餸系列: 菠菠趣蝦球

夏天最緊要都係快,
用 魚滑就最啱啦, 我知出面買啲魚滑唔夠自己打咁好, 但勝在快靚正嘛,
我 自己就不嬲都唔咀尖既, 當然覺得無咩所謂啦, 呵呵

齋魚滑嫌佢唔好爽口呀, 你可以加埋馬蹄粒, 但係當然多啲功夫啦, 我就超懶, 用蝦算啦, 一樣爽口又好味道呀, 係喎, 個餸唔算得好胞肚呀, 點解? 夏天實有好多生果吃,
緊 係流返個肚食生果呀, 食甜品啦, 呵呵

1- 魚滑1磅左右 (1 lbs of fish paste)

2- 中型洋蔥半個, 去衣切粒 (1/2 medium onion, diced)

3- 蒜蓉1湯匙 (1 tbsp minced garlic)

4- 蕃茄(牛 茄)3個, 切件 (3 beef tomato, cut into pieces)

5- 中蝦250克, 去殼切粒 (250g of medium shrimps, shell removed, diced)

6- 罐頭菠蘿6 片,切粒 (6 sliced of pineapple, diced)

1- 茄汁約3湯匙 (3 tbsp Ketchup)

2- 熱水1/4杯 (50 ml of hot water)

3- 菠蘿糖水2湯匙 (2 tbsp of sugar)

4- 老抽1茶匙 (1 tsp of black soya sauce)

5- 喼汁1湯匙 (1 tbsp of L&P Worcestershire sauce)

做法 Steps

1-
先蝦抹乾, 和魚滑用1/2茶匙鹽, 白胡椒粉攪勻(圖1), 再分成12個小球, 中火落油(約1湯匙)起鑊, 放入魚滑, 煎至兩面金黃及熟透(圖2), 盛起備用 (圖3)

2- 將鑊洗好抹乾,
快火 落約1/2湯匙油起鑊, 先將蒜頭爆香, 再加入洋蔥和1/3茶匙鹽和炒至軟身, 再加入蕃茄和1/3湯匙糖炒軟, 加入汁料兜勻煮滾(圖4), 加入魚球和菠籮兜勻, 熄火蓋頂焗1分鐘, 上碟 即成

1- Dry the shrimps well. Mix the shrimps and the fish paste with 1/2 tsp of salt and white pepper (fig.1). Divide it into 12 pieces. Heat the pan with 1 tbsp of oil over medium heat. Stir fry the fish balls until golden and well done (fig.2). Put it aside (fig.3)

2- Clean the pan and dry it well. Heat the pan with some oil over high heat with least 1/2 tbsp of oil. Stir-fry the onion with 1 tsp of salt until soft. Stir in the tomato with 1/3 tbsp of sugar. Stir fry it until soft. Stir in the sauce mix and heat through (fig.4). Stir in the fish paste and pineapple. Turn off the heat. Cover and simmer it for 1 minutes over high heat. Dish it up and serve it in hot.

1-
手沾過水, 魚扒就不會黏手, 要把它整成各種形狀也會變得很容易

汁料味道記得要自己調整, 喜歡酸一點的則可以加多點茄汁及下少一點糖, 相反的話就要加多點糖, 要杰一點的就要加生粉水埋獻

1- Divide the fish paste with wet hands will make the process easy. Fish paste won't stick to your hands if they are wet.
