[通少推薦]香芒奇檸批 (Mango key lime pie)


夏天餸系列: 香芒奇檸批, 夏天仲有咩好得過整個酸酸甜甜嘅清涼甜品自己嘆先


簡單無難度, 周末整就最啱, 快啲試吓啦

餅底 Crust
1- 消化餅8-10塊, 壓碎 (150g of Graham Crumbs)

牛油40克, 溶化 (40g of melted butter)

** 或用現成的批底 (or use the baked pie shell from supermarket)

餡料 Filling
份量只供參考 (just for reference only)

1- 蛋黃5隻 (5 egg yolk)

2- 煉奶1罐, 約 220毫升 (1 cane of condensed milk, about 220ml)

3- 青檸汁 60毫升  (60ml of lime)

批面 Topping
份量只供參考 (just for reference only)

1- 芒果啫哩粉半盒, 約45克 (1/2 box of mango jello, 45g)

2- 熱水
90毫升 (90ml of hot water)

3- 花奶或鮮奶
90毫升 (90ml of evaporated milk or milk)

** 或用改用發好的鮮忌簾 (or use whipped cream)
做法 Steps

1- 先將壓好的餅碎和牛油混合, 再放入已用錫紙包好的8吋餅模, 輕手壓平備用(圖1), 再將煉奶用發蛋器高速發勻(圖2), 再逐隻蛋黃加入, 高速打勻, 最後加入青檸汁(圖3)

2- 將發好的蛋料倒入
餅底上, 焗爐180攝氏度預熱, 將餅焗20分鐘, 待涼(圖4), 啫哩粉和熱水混合至無粒, 再加入花奶攪勻, 倒入已涼的餅面上, 雪3個小時即成 (如要用忌簾, 則將蛋餅雪3小時, 吃前才舖上忌簾)

1- Mix the crumbs and butter together.  Press it well into 8 inch cake mole wrapped by aluminum foil
paper (fig.1).  Whisk the condensed milk with electronic mixer in high speed (fig.2).  Add 1 yolk at a time and mix it well.  Add in lime juice and mix it well (fig.3)

2- Preheat the oven with 180 Celsius.  Put the mixture over the crumbs.  Bake it over 20 minutes.  Let it cool down (fig.4).  Mix the jello powder with hot water until dissolved completely.  Stir in the milk and pour it over the cooled pie.  Put the pie into the fridge and freeze it for 3 hours and serve. (if using whipped cream as the topping.   Freeze the cake for 3 hours and top it with the whipped cream before serve.).

貼士 Tips
1- 其實蛋料加入青檸汁時已經可以試味, 最好先加2/3青檸汁攪勻試一試, 太酸則加奶, 太甜則可以加多點青檸汁

2- 雪凍的青檸可以切開一半, 放入微波爐中, 煮15-20秒 或用熱水浸5分鐘,
青檸一旦受熱, 榨出來的汁份量可以比沒有受熱的多很多的

1- Taste the egg mixture after adding 2/3 of lime juice.  If it is too sour, add some milk to dilute it.  If it is too sweet, add more lime juice.

2- Cut the cold lime in half and heat it in microwave for 15-20 second or soak it in boiling water for 5 minutes.  A heated lime can produce more juice than unheated lime.
