自創食譜: 通之圍城 (Stir fry minced pork in mashed potato castle)

最近我哩邊天氣非常之寒冷呀, 每日都活在零下15度以下, 每天都唔多想出街呀, 因為一出去就會結冰呢, 哈哈

昨日請了假去看牙齒, 所以都無出到食譜,

實比到啲童年回憶比你呢, 因為整哩個餸就係堆一個薯蓉城堡呀

就係因為有薯蓉, 所以個餸唔需要太多配料就已經可以好飽肚啦, 上湯汁加滑溜嘅薯蓉, 入口即溶,

有人問我, 有薯蓉咁仲洗唔洗煲飯呢, 我無飯不歡, 所以我一定會煲埋飯, 同埋始終哩個係中式餸菜嘛, 無飯好似怪怪咁, 不過隨你喜好啦, 無一定嘅答案, 哈哈

1- 免治豬肉400克左右 (400g of minced pork)

2- 中型洋蔥半個, 去衣切絲 (1/2 medium onion, sliced)

3- 白磨菇200克, 去蒂切粒 (200g of white mushroom, stemmed off, separated)

4- 蒜蓉1湯匙 (1 tbsp minced garlic)

5- 芫茜切粒, 1湯匙 (1 tbsp minced coriander)

6- 白肉薯仔400克, 切件去皮 (400g of potato, peeled, cut into pieces)

汁料 Sauce
份量只供參考 (just for reference only)

1- 史雲生雞湯1罐 (1 cane of chicken broth)

2- 粟粉1湯匙 (1 tbsp of corn starch
)

3- 水2湯匙 (2 tbsp of water)

做法 Steps

1- 先將豬肉用基本醃15分鐘, 同時將薯仔大火煲15分鐘或至腍, 隔好水, 加入1/2茶匙鹽, 再壓成薯蓉, 放上碟備用(圖1), 快火落油(約1湯匙)起鑊, 再將豬肉炒熟, 盛起備用(圖2)

2- 薯蓉待涼後, 用手堆成一個圓圈(圖3), 快火落油(約1湯匙)起鑊, 先落蒜茸炒至金黃, 加入洋蔥加1/3茶匙鹽炒至軟身, 再加磨兜勻炒香, 再加豬肉, 芫茜和汁料兜勻煮滾(圖4), 蓋定焗1分鐘, 上碟放入圈中即成

1- Marinade the pork with basic seasoning for 15 minutes.  Meanwhile, boil the potato over high heat for 15 minutes.  Drain it well.  Stir in 1/2 tsp of salt and mash it well.  Put the mash potato on the dish to cool down (fig.1).  Heat the pan with 1 tbsp of oil.  Stir in the pork and stir fry it until done (fig.2).  Dish it up and put it aside.

2-  Press the mashed potato and form a circle (fig.3).  Heat the pan with 1 tbsp of oil over high heat.  Stir fry garlic is golden and fragrant.  Stir in the onion with 1/3 tsp of salt until soft.   Stir in the mushroom, and mix it well.  Stir in the pork, coriander, and sauce mix (fig.4).  Cover and simmer for 1 minute.  Put it into the mashed potato circle.  Dish it up and serve it in hot.

貼士 Tips
1- 薯蓉如果太難壓的話, 只要加點水, 就能壓出非常滑的薯蓉, 但小心, 加得太多水就會大腍, 那就很難壓出一個圓圈呢

2- 雞湯用史雲生鹹味比較適中, 不用加太多水就可以用, 如果用其他牌子, 味道記得好好調教呢

1- If it is too hard to mash the potato, add some water to it.  It will be easy to mash the potato.  However, do not add too much water or it will be too soft to form a circle.

2- I used a chicken broth with light taste.  Since each brand of chicken broth saltiness is different, make sure you adjust the taste accordingly

    我一向習慣紜薯仔切片蒸軟, 再用刀背壓爛的.

    我試過用微波爐, 將薯仔放入碗中加1/4杯水, 蓋濕布叮8分鐘, 一樣得
