自創食譜: 無石膏粉的凍豆腐花 (Tofu pudding)

哩排真係傻傻地, 我最近突然迷上整啲港式小食, 之前整過缽仔糕, 又整過蔥油餅, 前兩日就整了這個無石膏粉的凍豆腐花, 昨日又整了豆沙水晶糕, 我現在連豆沙蓉都是自己整,

真係傻得好緊要

不過通少嘅宗旨仍然無改到, 始終如果材料太復雜, 步驟太繁複,

我係完全無興趣整嘅, 好似豆沙蓉咁, 只不過用豆沙, 片糖同水就搞掂, 時間不夠需要15分鐘就整好, 完全無難度

豆腐花同樣道理, 在我住的地方, 要買石膏粉已經不是易事, 就算買到了, 整完一次淨下一大袋,

又唔知點處理, 加上傳統做法步驟講究, 對我這個要返工嘅懶人嚟講, 實在太麻煩啦,

但為食嘅態度始終改不了, 哈哈, 所以就用這個新方式去做豆腐花, 無錯, 只需要魚膠粉就搞掂, 大家別問我大菜糕可不可以, 我唔知道, 始終魚膠粉我試得很多, 所以有信心給大家一個必定做到的配方

這個豆腐因沒有石膏粉,

所以只可以凍吃, 而我做時已分開了細細碗, 減少凝固嘅時間, 大家要記得,

別將豆
漿煲得太滾, 一來雪凍的時間會加長很多, 魚膠漿就會有可能沉底, 令豆腐花下硬上軟, 二來太滾的豆漿和魚膠漿比較難混合, 會產生很多硬塊的

如果大家有大木桶, 可以將豆漿和魚膠混合後放入木桶雪藏, 吃時一片片用剷出來放入小碗中品嚐,

材料 Ingredients

1- 無糖豆漿2杯 / 440ml  (440ml/2 cup of unsweetened Soya milk)

2- 糖1湯匙 (1 tbsp of sugar)

3- 魚膠粉1/2湯匙 / 7.5克 (7.5g/1/2 tbsp of Gelatin powder)

4- 凍水20 ml / 4/3湯匙  (20 ml of cold water)

汁料 Sauce
份量只供參考 (just for reference only)

1- 薑蓉1湯匙 (1 tbsp of minced ginger)

2- 冰
糖10克 (10g of rock sugar)

3- 水半杯 / 110ml  (110ml /1/2 cup of water)

做法 Steps

1- 豆漿用中火煲至暖, 加入糖攪勻, 熄火備用, 魚膠粉加入20ml凍水於一個碗中浸透成海綿狀, 再將載有魚膠粉的碗浸於另一個載了滾水的碗中坐熱, 攪成魚膠漿備用(圖1)

2- 待豆漿稍涼後, 將豆漿和魚膠漿徹底攪勻, 平均到入器皿中(圖2), 雪5-6個小時即成, 將汁料煲至糖溶化, 雪凍備用, 吃時可以就可以加薑糖水或黃糖享用

1- Boil the soya milk until warm in medium heat.  Stir in the sugar until dissolves.  Put it aside.  Place the gelatin powder with 20ml of water in small bowl.  Soak it for 5 minutes or until spongy.  Stand the bowl in another bowl of hot water.  Stir the gelatin mixture until dissolves.

2-  Cook slightly the soya milk.  Mix the soya milk with gelatin mixture together.  Place the mixture evenly into the small bowl.  Put it into the fridge for 5-6 hours.  Boil the sauce mix until the sugar dissolves.  Put it also into the fridge.  Serve together when it is ready.
 

貼士 Tips
1- 記得切勿加得太多魚膠粉, 否則過硬就不似豆腐花了

2- 豆
漿不要煲滾, 微暖足夠熱力去溶糖就可以了, 要待涼一點才好和魚膠槳混合

1- Never add too much gelatin or it will be too hard.

2- Do not boil the soya milk.  Bring it to warm where it has enough heat to dissolve the sugar.  Wait until it cool down a bit before mixing it with gelatin mixture.
