自創食譜: 茄汁魚扒 (Pan fry fish cake in tomato sauce)

我個鼻久唔久就會聞到煙味, 橙味呀, 可以持續一兩個月, 所以之前去睇專科cehck吓, 昨日去看報告, 幸好沒有發現甚麼, 醫生話無咩可以幫到我喎,

唔知大家有無哩個問題呢?

今日哩個餸真係好得意, 蕃茄豬扒大家就食得多, 有無諗過用魚滑代替豬扒呢, 雖然肉同魚嘅味道唔一樣,

1- 魚滑1磅左右 (1 lbs of fish paste)

2- 中型洋蔥半個, 去衣切粒 (1/2 medium onion, diced)

3- 蒜蓉1湯匙 (1 tbsp minced garlic)

4- 蕃茄(牛茄)3個, 切件 (3 beef tomato, cut into pieces)

汁料 Sauce
份量只供參考 (just for reference only)

1- 茄汁約3湯匙 (3 tbsp Ketchup)

2- 熱水1/2杯 (100 ml of hot water)

3- 糖1/2湯匙 (1/2 tbsp of sugar)

4- 老抽1湯匙 (1 tbsp of black soya sauce)

做法 Steps

1- 先魚滑和1/2茶匙鹽, 白胡椒粉攪勻, 再分成10分壓平 (圖1), 中火落油(約1湯匙)起鑊, 放入魚滑, 壓平, 煎至兩面金黃及熟透(圖2), 盛起備用

2- 快火落油(約1/2湯匙)起鑊, 先將蒜頭爆香, 再加入洋蔥和1/3茶匙鹽和炒至軟身, 再加入蕃茄和1/2湯匙糖炒軟(圖3), 加入汁料兜勻煮滾, 加入魚扒(圖4), 大火蓋頂焗2分鐘, 上碟即成

1- Mix the fish paste with 1/2 tsp of salt and white pepper.  Divide it into 10 pieces and press it well (fig.1).  Heat the pan with 1 tbsp of oil over medium heat.  Stir fry the fish paste until golden and well done.  Put it aside

2-  Heat the pan with some oil over high heat (at least 1/2 tbsp of oil).  Stir-fry the onion with 1 tsp of salt until soft.  Stir in the tomato with 1 tbsp of sugar.  Stir fry it until soft (fig.3).  Stir in the sauce mix and heat through.  Stir in the fish paste (fig.4).  Cover and simmer it for 2 minutes over high heat.  Dish it up and serve it in hot.

貼士 Tips
1- 手沾過水, 魚扒就不會黏手, 要把它整成各種形狀也會變得很容易

2- 汁料味道記得要自己調整, 喜歡酸一點的則可以加多點茄汁及下少一點糖, 相反的話就要加多點糖, 要杰一點的就要加生粉水埋獻

1- Divide the fish paste with wet hands will make the process easy.  Fish paste won't stick to your hands if they are wet.

2- Adjust the taste of the sauce according to your preference.  Add more ketchup if you want it sour or add more sugar if you want it sweet.

  7. 好好味咁喎~~~ 其實我想問吓 究竟炒洋蔥係加鹽定加糖?? 因為阿媽話加糖可以令洋蔥香甜啲 咁加 鹽係可以.....咩呢?? 快啲軟身??
    [版主回覆01/14/2010 05:20:00]美麗的誤會, 好多人因為炒洋蔥唔熟, 所以覺得又辣又無味, 就係炒時加糖, 其實(之少對我嚟講)係唔需要咁做
    洋蔥炒熟又甜又香, 所以好多菜色, 湯水咁, 都會加洋蔥
    落鹽炒就會將洋蔥變軟身, 令佢更快熟透, 令佢甜味帶出, 所以我(純粹個人意見)一定會叫人落鹽, 唔需要落糖
    我唔敢話你呀媽做錯, 哩個係我經驗所得, 唔信你可以試吓

  8. 其實我自己炒洋蔥會一直炒炒炒 炒到成屋都聞到好大陣洋蔥味 我先會加糖 有時都會覺得甜咗啲= = (我好鍾意大量軟軟嘅洋蔥絲撈飯 好好味 ) 等我下次試吓加鹽先~ 原來咁樣係可以快啲軟嘅~


    [版主回覆01/14/2010 10:12:00]呵呵, 我有次聽"呀蘇"講啦, 唔加鹽, 加啲老抽炒呀炒, 炒呀炒, 炒左好耐, 都係好硬, 食時唔多掂, 又硬, 又無咩味 所以我都係信返自己, 加左鹽, 炒一陣就會軟身變啡, 有時忍唔著偷食吓, 嘩, 真係好甜呀

  10. 其實我都有呢個問題. 我試過有蕉味, 煙味, 鐵生秀味, 好多唔同味都試過有. 不過只係一段小時間就消失....我以為個個都會發生既tim..

  11. hehe~你好啊通少!跟住你整左個鮮茄豬扒好好味啊, 不過我冇紅蔥頭同 蒜蓉落去,唔知味道又會係點呢^^ 其實咩叫 紅蔥頭啊? 炒蕃茄唔落糖係咪都得嫁,最後冇 調味同埋獻都ok ?

    紅蔥頭你去超市睇下就明, 係紅色, 類似蒜頭咁
    炒蕃茄唔落糖係得, 不過蕃茄會無咁出味呀
    最後冇 調味同埋獻都ok? << 唔埋獻無問題, 調唔調味就要先試味啦, 唔夠味都要調味呀, 無理由唔理佢, 係唔係?

  12. 蕃茄煮魚係一個不錯的廣東菜唷, 小妹家中常常都有蕃茄煮紅衫魚, 煎完的紅衫魚再加用新鮮蕃茄自製的茄汁, 好好味o架,

    不過我哩個魚餅又係另一種風味, 比較香口, 惹味

  13. 通少..好耐冇入黎la....因為我好耐冇煮飯..唔係我懶..而係我開左間鋪..日日要睇鋪所以冇時間煮野..
    今次睇落好似都ok 易煮喎..
    我都耐不耐會聞到香味..但就唔係橙同煙..而係類似香水既味..(不過對於我黎講呢d叫回憶香味)..因為呢種香味係我十幾年前去日本玩時..日日都聞到..但返左香港就冇..隔左幾年..有日突然係home聞到一下(不過間屋得我..)..當時就回想起係日本的時候..所以我叫佢做回憶香味
