終於都停左雪啦, 其實都唔係好犀利啦, 只係落左25cm 左右, 都唔算好差啦, 不過哩個只係一個開始呀, 唔知之後啲雪會唔會都落得咁勁呢

係呀, 今日係冬季奧運傳聖火呀, 聽聞陳奕迅會有份喎, 我覺得好奇怪, 點解佢會有份呢? 佢又唔係運動員,

1- 免治豬肉400克左右 (400g of minced pork)

2- 中洋蔥1個, 去皮, 切粒 (1 medium onion, peeled, diced)

3- 蕃茄1個, 切粒 (1 tomato, diced)

4- 蒜蓉1湯匙 (1 tbsp minced garlic)

5- 雜豆1杯 (1 cup of assorted vegetable)

6- 白磨菇5粒, 去蒂, 切半 (5 white mushroom, stemmed off, cut into half)

7- 蛋1隻 (1 egg)

8- 豆腐1盒(450克), 切粒 (1 box of tofu (450g), diced)
汁料 Sauce
份量只供參考 (just for reference only)

1- 茄汁2湯匙 (2 tbsp of ketchup)

2- 糖1/2茶匙 (1/2 tsp of sugar)

3- 熱水1/4杯 (1/4 cup of hot water)

4- 老抽1/2茶 (1/2 tsp of dark soya)
做法 Steps

1- 先將豬肉用基本醃15分鐘, 同時將豆腐飛水3分鐘, 隔好水先排上碟(圖1), 快火落油(約1湯匙)起鑊, 再將豬肉炒熟, 盛起備用 (圖2), 蛋黃和蛋白分開備用

2- 快火落油(約1湯匙)起鑊, 先落蒜茸炒至金黃, 加入洋蔥加1/3茶匙鹽炒至軟身, 再加蕃茄加1/3茶匙糖炒至軟身(圖3), 再加雜豆, 豬肉, 磨菇和汁料兜勻煮滾(圖4), 蓋定焗2分鐘, 熄火, 加入蛋白輕手攪勻, 上碟, 再加蛋黃於中央即成

1- Marinade the pork with basic seasoning for 15 minutes.  Meanwhile, blanch the tofu for 3 minutes.  Drain it well and dish it up (fig.1).  Heat the pan with 1 tbsp of oil.  Stir in the pork and stir fry it until done (fig.2).  Dish it up and put it aside.  Separate the egg yolk and egg white.  Put it aside.

2-  Heat the pan with 1 tbsp of oil over high heat.  Stir fry garlic is golden and fragrant.  Stir in the onion with 1/3 tsp of salt until soft.   Stir in the tomato with 1/3 tsp of sugar until soft (fig.3). Stir in the assorted vegetables, pork, mushroom and sauce mix, and mix it well (fig.4).  Cover and simmer for 2 minutes.  Turn the heat off.  Stir in the egg white and mix it well.  Dish it up.  Add the egg yolk in the middle.  Serve it in hot.

貼士 Tips
1- 茄汁味道隨自己味道而改變, 要甜一點則加多點糖, 要酸一點可以加多點茄汁或鹽, 要杰一點就加生粉水

1- Adjust the taste of your sauce according to your taste.  Add more sugar if you want it sweet.  Add more ketchup and salt to make it more sour.  Add corn starch to thicken the sauce

2- Break the egg yolk when you are ready to eat.  The visual effect make the dish more attractive.
