食譜: 麵豉茄子 (Eggplant in miso sauce)

好多人都病呀, 本來諗著去睇醫生, check 吓背側痛嘅問題啦, 但去到診所大排長龍, 諗吓諗吓都係唔去啦睇啦, 咁多人傷風咳,

1- 豬柳1磅左右, 切片 (1 lbs of tenderloin pork, cut into pieces)

2- 中型洋蔥半個, 去衣切粒 (1/2 medium onion, diced)

3- 蒜蓉1湯匙 (1 tbsp minced garlic)

4- 茄子3條, 切件 ( 3 eggplants, cut into pieces)

5- 熱水1/4杯 (60ml) (1/4 cup (60 ml) of hot water)

汁料 Sauce
份量只供參考 (just for reference only)

1- 白麵豉2湯匙 (2 tbsp white miso)

2- 清酒2湯匙 (2 tbsp sake)

3- 糖1/2茶匙 (1/2 tsp of sugar)

4- 日本醬油1/2茶匙 (1/2 tbsp Japanese Soya)

5- 水1/4杯 (60ml) (1/4 cup (60 ml) of water)

6- 味醂1/2湯匙 (1/2 tbsp of mirin)

做法 Steps

1- 先將豬肉用基本野醃15分鐘備用, 快火落油(約1湯匙)起鑊, 落豬肉炒熟(圖1), 盛起備用

2- 快火落1湯匙油, 快火起鑊, 先爆香蒜茸, 再加入洋蔥和1/3茶匙鹽炒至軟身(圖2), 再加入茄子兜勻(圖3), 再加1/4杯熱水, 蓋頂焗3分鐘(圖4), 再加豬肉和汁料兜勻煮熱, 上碟即成

1- Marinade the pork with basic seasoning for 15 minutes.  Heat the pan with 1 tbsp of oil over high heat.  Stir fry pork until done (fig.1).  Put it aside

2-  Heat the pan with 1 tbsp of oil over high heat.  Stir fry the garlic until fragrant.  Stir-fry the onion with 1/3 tsp of salt until soft (fig.2).  Stir in the eggplants and mix it well(fig.3).  Add 1/4 cup of hot water.  Cover and simmer for 5 minutes (fig.4).  Stir in pork with the sauce mix and heat through. Dish it up and serve it in hot.

貼士 Tips
1- 白麵豉味淡帶清香, 用作汁料是非常適合, 記得麵豉不宜煮太耐, 否則會失去香味, 而味道更有可能會邊酸

2- 茄子不用油炸改用水焗熟比較健康, 記得先將茄子炒一炒先, 會令它顏色保護得更好, 煮時就不怕醜樣了

1- White miso taste more fragrant.  It is suitable to use as sauce mix.  Remember not cook the miso too long as it will lose its taste and turning to sour taste.

2- Simmer the eggplants is better than deep fry it.  Stir fry the eggplants before simmer to keep its color.

  4. 我前日都整咗茄子。不過有D唔同。我係先將茄子切片撒D蒜茸上面然後隔水蒸。上碟後淋個蠔油sauce上面。都好清,而且茄子既nutrient亦唔會流失咗~你都試下然後俾D意見我呀~

  8.         嘩,真係 啱 啱遇著剛剛,老豆 喺農場度拎 咗返 嚟 啲矮瓜到依家都未食, 我都準備星期六煮呢個 餸,試 吓用白味噌煮好唔好味,點知咁 啱你又整,咁我就可以參考你個煮法喇!

  10. eggplant 係我的至愛, 點樣至可以整到唔會發黑呢? 呢個難題考究咗好耐都未解決到呢, 試過用油炸, 點知 d 油索哂入 d eggplant 度, 如果淨炒, 一樣會發黑, yyyyyyyyyyyyyyy  多多指教
    其實我都好歡喜整唔同的食物呀, 最緊要我同你一樣, 身邊人食得開心, 自己又開心呢

  12.         通少,我煮 咗啦,好好味呀!原本我自己個 idea 淨係用味噌,但見到你呢個 recipe 之後,就跟你一樣落埋味醂、清酒同日本醬油。可惜因為 啲矮瓜俾我煮得腍得滯,買相唔靚,所以無掟上 blog 度,下次煮好 啲再 post 過俾你睇啦!
