食譜: 黑欖菜香爆雙青 (stir fry minced pork with snow pea and green pepper)

又去到最討厭嘅星期一啦, 由於今朝落雨,

所以特別難起身, 返到公司咩都唔想做, 好想返家瞓覺呀

今日哩個餸, 非常之香口惹味, 但一啲都唔油膩呢

免治豬肉最大問題就係好肥,

所以我通常都會將佢炒熟, 隔好油先再用, 因為肥肉煮過, 脂肪會變成油, 隔過免治豬肉就會變成瘦肉, 一啲都唔會肥膩

甜豆加青椒味道十分清爽, 帶有中和味道嘅作用, 加黑欖菜, 就令成碟餸香口惹味呀, 記得黑欖菜最後先好加,

材料 Ingredients

1- 免治豬肉450克 (450g of minced pork)

2- 甜豆350克左右  (350g of honey pea)

3- 蒜蓉1湯匙 (1 tbsp of minced garlic)

4- 青椒1個, 切絲 (1 green pepper, sliced)

5- 黑欖菜2湯匙 ( 2 tbsp of shredded black olive)

汁料 Sauce
份量只供參考 (just for reference only)

1- 蠔油1湯匙 (1 tbsp of oyster sauce)

2- 水3湯匙 (3 tbsp of water)

3- 糖1/2茶匙 (1/2 tsp of sugar)

做法 Steps

1- 先將豬肉用基本野醃15分鐘備用,  快火起鑊, 將豬肉炒熟(圖1), 隔油備用, 甜頭切頭和尾, 去絲, 飛水2分鐘(圖2), 盛起備用

2- 快火落油(約1/2湯匙)起鑊, 先爆香蒜茸, 落青椒和甜頭炒至乾身 (圖3), 再加入豬肉和汁料兜勻(圖4), 熄火, 加入黑欖菜兜勻, 上碟即成

1- Marinade the pork with basic seasoning for 20 minutes.  Heat the pan over high heat and stir fry the pork until well done (fig.1).  Drain it well and put it aside.  Remove the stem of the honey pea.  Blanch it for 2 minutes (fig2).  Drain it well and put it aside

2- Heat the pan with some oil over high heat (at least 1/2 tbsp of oil).  Stir fry the garlic until fragrant.  Stir in the green pepper and snow pea until dry (fig.3).  Stir in the minced pork and sauce mix (fig.4).  Turn the heat off and stir in the black olive.  Dish it up and serve it hot

1- 甜豆的根包著整個甜豆, 切去頭尾部分會容易將它去除

1-  The stem of honey pea is around the pea.  Remove the both end will help to remove the stem easily
