食譜: 香辣蝦煲 (Spicy shrimps with vermicelli hot pot)

星期五啦, 真係好開心呀, 終於可以休息吓啦, 今日公司做年度員工表現評核呀, 我好擔心, 因為老闆換左人, 新嘅老闆有無咩腦, 我唔覺得會有咩好嘅分數啦

不過都好在佢新, 佢問晒其他同我合作嘅同事,

好多人都問我, 做咩雞湯要寫明咩牌子呢? 有咩分別呢? 其實每隻牌子嘅雞湯, 個濃縮度唔會一樣, 史雲生大罐啲, 但濃縮度反而唔及細細罐嘅金寶呀, 而超市賣得最多嘅紙合裝濃縮度更低, 所以落嘅份量唔會一樣, 我講明個牌子, 等大家可以自己調教啦, 例如你無金寶, 落史雲生的話, 就要落多啲, 而水份就可以落少啲

唔講咁多啦, 大家記得要試吓啦,

材料 Ingredients

1- 蝦15隻左右, 洗淨去殼 (15 shrimps, shell removed and cleaned)

2- 粉絲約80克, 浸軟, 剪半 ( 80g of vermicelli, soaked, cut into half)

3- 中型洋蔥1個, 去皮切絲 (1 medium onion, peeled, sliced)

4- 蒜蓉2湯匙 (2 tbsp of minced garlic)

汁料 Sauce
份量只供參考 (just for reference only)

1- 金寶雞湯1/4 罐 (1/4 Campbell cane of chicken broth)

2- 水1罐 (1 cup of water)

3- 辣椒油1茶匙 (1 tsp of chili oil)
 
做法 Steps

1- 先將蝦用鹽, 胡椒粉, 生粉各1茶匙醃10分鐘, 快火落油(約1湯匙)起鑊, 將蝦炒熟盛起隔油備用

2- 快火落油(約1湯匙)起鑊, 先爆香蒜頭至金黃, 再落洋蔥和約1/2茶匙炒至軟身(圖1), 再加入蝦炒勻(圖2), 再加入粉絲和汁料 (圖3), 大火煲滾 (圖4), 調好味, 蓋頂焗2分鐘即成

1- Marinade the shrimps with salt, pepper and corn starch (1 tsp of each) for 10 minutes.  Heat the pan with 1 tbsp of oil over high heat.  Fry the shrimps until done.  Put it aside and drain it well

2- Heat the pan with 1 tbsp cup of oil over high heat.  Stir-fry the garlic until fragrant.  Stir in the onion with 1/2 tsp of salt until soft.  Stir in the shrimps and mix it well (fig.2).  Stir in the vermicelli and sauce mix (fig.3).  Heat it through over high heat (fig.4).  Adjust the taste and turn off the heat.  Simmer it for 2 minutes.  Serve it in hot.

1- 汁料等最後先調味, 如果太鹹的話, 可以加點熱水撈勻
