食譜: 瑞典肉丸 (Swedish meatballs)

話都似ikea啲肉丸呀, 我記得blog友b之家有篇blog話ikea啲肉丸好味, 我手痕痕, 就決定試吓整

其實一啲都唔難整, 味道當然非常好啦, 因為真係有好多材料呀, 就咁食, 唔伴醬汁, 都覺得好好味

哩個食譜, 我係按照原本個材料寫出嚟, 但我有2樣材料唔同食譜, 我用多士粒代替麵包糠, 我用牛仔碎肉代替豬牛碎肉, 其實對碟餸影響唔大, 只係我有咩材料, 就會用咩材料,

肉質因加左奶同水, 所以非常之軟滑, 唔同一般肉丸咁實同硬, 連埋個汁, 真係無得頂呀,

材料 Ingredients

1- 碎牛/豬肉, 各半磅左右 (Minced beef and pork, 1/2 lbs each)

2- 中型洋蔥1個, 去衣切粒 (1 medium onion, peeled, shredded)

3- 蒜蓉2茶匙 (2 tsp chopped garlic)

4- 奶2/3杯 (2/3 cup of milk)

5- 麵包糠1杯 (1 cup of breadcrumb)

6- 蛋2隻 (2 eggs)

7- 洋芫茜香草碎3湯匙 (3 tbsp of Parsley flakes)

8- 鹽1湯匙 (1 tbsp of salt)

9- 黑椒1湯匙 (1 tbsp of black pepper)

10- 生粉2湯匙 (1 tbsp of corn starch)
汁料 Sauce
份量只供參考 (just for reference only)

1- 濃縮雞湯1/3罐 (1/3 cane of chicken broth)

2- 水1/2杯 (1/2 cup of water)

3- 奶1/3杯 (1/3 cup of milk)

4- 麵粉3湯匙 (3 tbsp of flour)

5- 牛油2湯匙 (2 tbsp of butter)

6- 老抽2茶匙 (2 tsp of black soya)

做法 Steps

1- 先快火落油(約1湯匙)起鑊, 加入洋蔥和1茶匙鹽炒至軟身 (圖1), 待洋蔥涼了點後, 連同其他材料, 順方香攪至起膠 (圖2), 再扼先小丸備用

2- 快火落油(約1湯匙)起鑊, 轉中火, 將小丸煎至金黃及全熟 (圖3), 上碟備用, 再用中火白鑊將汁料兜勻煮滾至杰身(圖4),  淋上肉丸, 灑上香草即成

1- Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Stir-fry the onion with 1 tsp of salt until soft (fig.1).  Once it is cool down, mix it with all the ingredients.  Stir the mixture clockwise until it forms a paste (fig.2).  Knead it into small piece by hand.  Put it aside.

2- Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Turn to medium heat.  Stir fry the mixture until both sides turn brown and well done (fig.3).  Dish it up.  Heat the pan with medium heat.  Stir in the sauce mix and heat through.  Pour it over to meatball.  Add some parsley and serve it in hot.

1- 汁料最好用隔, 隔開煮不溶的材料

2- 要肉丸容易熟又不濃的話, 可以加1/4杯熱水, 蓋頂煮至水份收乾即可
