食譜: 辣醬蝦球 (shrimps and zucchini in spicy sauce)

好多blog友問我啲蝦點整先可以爽口啲, 以我所知, 蝦無論急凍定新鮮, 都要用鹽醃過, 就會爽口, 當然啦, 如果蝦本身係霉的話,

原本yahoo字典叫佢做美州南瓜, 我之前仲叫佢係意大利水瓜, 真係錯得好離譜呀, 哈哈哈, 不過我知香港唔易搵到, 大家可以用翠玉瓜代替就得啦, 唔需要專登用佢呀, 青瓜亦得

1- 中蝦連殼10隻, 去腸 (10 shrimps with shell, cleaned)

2- 蒜蓉1湯匙 (1 tbsp chopped garlic)

3- 中型洋蔥1個, 去衣切絲 (1 medium onion, sliced)

4- 美州南瓜3條, 切件 (3 zucchini, cut into pieces)

5- 粟米仔菇8條, 去段 (8 baby corn, cut into section)

汁料 Sauce mix

份量自供參考 (just for reference only)

1- 辣豆板醬3湯匙 (3 chili bean (a.k.a Toban Djan) sauce)

2- 蠔油1湯匙 (1 tbsp of oyster sauce)

3- 麻油1茶匙 (1 tsp of sesame oil)

4- 糖1/2茶匙 (1/2 tsp of sugar)

5- 水1湯匙 (1 tbsp of water)

做法 Steps

1- 蝦先用鹽, 胡椒粉醃10分鐘, 再平均沾滿粟粉, 快火落油(1湯匙)起鑊, 蝦煎至兩面金黃及全熟(圖1), 盛起備用

快火落油(約1湯匙)起鑊, 爆香蒜茸, 加洋蔥和1茶匙鹽炒至軟身, 加入粟米仔和水瓜炒香(圖2), 加入汁料(圖3)兜勻, 汁滾加入蝦兜勻(圖4), 上碟即成

1- Marinade the shrimps with some salt and pepper for 10 minutes.  Coat the shrimps evenly with corn starch.  Heat the pan with oil (1 tbsp) over high heat.  Fry the shrimps until both sides turn brown and fully cooked (fig.1).  Put it aside.

2- Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Stir fry the garlic until fragrant.  Stir in onion with 1 tsp of salt until it turns soft.  Stir in the zucchini and baby corn and mix well (fig.2).  Stir in sauce mix and mushroom, and mix it well (fig.3).  Once the sauce is boiled, stir in the shrimps and mix it well (fig.4).  Dish it up and serve it in hot.
