食譜: 沙茶香腸炒一叮 (Stir-fry instant noodle with chinese bbq sauce)

近日最心痛當然就係四川地震, 我見到啲人流離失所, 個個痛失親人個情景, 真係令人心酸, 就好似當年海嘯一樣, 都叫人無法忘記呀

好啦, 講完新聞, 係時候講番碟餸啦

出前一叮大家成日都會食啦, 睇波悶悶地又一碗, 朝早懶懶地又一碗, 出去茶餐廳有時都會叫

其實炒一叮可以話係香港茶餐廳特色之一, 有好隻口味, 有沙茶, 有海鮮, 有肉絲添

blog友B の家 之前問過我點整, 我心痕痕就去試整左哩個沙茶炒一叮啦, 今日就同大家分享吓, 哈哈

其實真係唔係難, 但麵係炒前, 一定唔可以煮得過熟, 否則會影響口感呀, 仲有, 腸仔不況豪少少, 用啲有多啲肉汁嘅, 咁炒完出黎會好味好多

同埋同普通炒麵一樣, 最後一定要快快手兜好啲汁, 唔好拖太耐, 否則會影響麵嘅口感呀

隻蛋吃時要篤穿個黃, 撈埋啲麵食

烹調時間: 40分鐘左右

1- 出前一叮2包  (2 bag of instant noodle)
2- 蛋1隻 (1 egg )
3- 中型洋蔥1個, 切絲 (1 onion, peeled, sliced)
4- 靚肉腸4條左右, 切件 (6 sausages, washed, cut into pieces)
5- 蒜蓉2湯匙 (2 tbsp minced garlic)
6- 青椒1個, 切絲 (1 green pepper, sliced)

份量自供參考 (just for reference only)

1- 沙茶醬 2 湯匙 (2 tbsp chinese bbq sauce)
2- 糖1/2茶 (1/2 tsp of sugar)
3- 蠔油1湯匙 (1 tbsp soay sauce)
4- 即食麵麻油2包 (2 bag of instant noodle sesame oil)
5- 水1湯匙 (1 tbsp of water)

1- 將公仔麵先煲至8成熟(麵仍然硬身, 但可以用筷子一條條夾起) (圖1), 立即過冷河, 隔水備用 (圖2)

2- 快火落油起鑊, 爆香蒜蓉, 再加洋蔥落少許鹽炒至軟身, 加香腸炒香(圖3)

3- 加入青椒炒香, 再加入汁料和即食麵快手用筷子兜勻(圖4)上碟, 再將蛋用少少油煎成半生熟, 放於麵上即成

1- Boil the noodle to 80% done (where the noodle is not totally soft but can separate easily by the chopstick)(fig1).  Cool it under cold water and drain it well (fig2)

2- Heat the pan with oil in high heat.  Saute the garlic until fragrant.  Add and stir-fry the onion with some salt until soft.  Add the sausage and stir-fry it until fragrant(fig3)

3- Add the green pepper and mix it well.  Add the sauce mix and the noodle.  Use the chopsticks and mix the ingredient quickly (fig4).  Put it on the dish.  Cook the egg until 50% done.  Add it on the top of the noodle.  Serve hot.

4- 腸仔用那些比較貴的德國蒜腸會比用熱狗腸好
