食譜:雪中尋牛 (Beef under Bread crumb)

點解叫雪中尋牛呢?

因為啲牛肉比麵包糠蓋過, 感覺就好似啲牛肉藏係啲雪入面咁囉, 哈哈

基本上哩個菜色無咩難度, 只係要小心麵包糠好易會焗燶, 要小心

正所謂: 雪中尋牛夠有趣, 好味鬼馬無老吹

哩將相咁紅, 係因為用左太太部相機

烹調時間: 40分鐘左右

材料
Ingredients:
1- 牛肉1磅左右, 切粒 (Beef 1 lbs, diced)
2- 蒜蓉1湯匙 (1 tbsp chopped garlic)
3- 紅蘿蔔1條, 去皮, 切粒 (1carrots, peeled, diced)
4- 中型洋蔥1個, 去皮,切粒 (1 onion, peeled, diced)
5- 紅蔥頭1粒, 去衣, 切粒 (1 shallot, peeled, diced)
6- 磨菇4-6粒, 去蒂, 切粒(14粒) (4-6 mushrooms, peeled, diced)
7- 日式麵包糠適量 (japanese bread crumb)

汁料 Sauce: (份量只作參考)
1- 照燒汁3湯匙 (3 tbsp teriyaki sauce)
2-海鮮醬2茶匙 (2 tsp hoisin sauce)
3-蠔油2茶匙 (2 tsp oyster sauce)
4-鹽適量 (some salt)
5- 水1杯左右 (1 cup of water)

做法
Methods:

1- 牛肉先用基本野((除了鹽)醃15分鐘, 麵包糠用華氏300度焗至微黃(圖4), 備用

2- 快火落油起鑊, 爆香蒜蓉, 紅蔥頭, 炒香牛肉至7成熟(圖1), 備用

3- 快火落油起鑊, 用少許鹽爆香洋蔥和蘿蔔至軟身, 加入磨菇(圖2)略炒一下, 再加汁料調味(圖3), 灑上麵包糠即成

1- Marinade the beef with usual spices (expect salt) for 15 mins.  Bake the bread crumb in a oven with 300F until brown.

2-  Heat the pan with oil in high heat.  Stir-fry shallots, garlic and cook the beef until 70% done.(Fig2). Put it aside

3- Heat the pan with oil in high heat.  Stir-fry the onion and carrot with some salt until soft.  Add the mushroom and stir fry it a bit (Fig2).  Add the sauce to taste (fig3).  Add the bread crumbs on the top of the beef.

貼士:

1- 牛肉唔好用醃醃, 用糖可使肉質更腍

2- 麵包糠超易燶, 請小心

3- 用日本豉油會更加惹味

4- 汁料份量請執生, 唔好落得太多水

哩次係我第一次去菜市場, 住在係哩邊15年, 都未去過(成日經過, 但無入過去), 今日終於"通少逛菜欄", 哈哈

其實比我想像中細, 買嘅野又唔咩特別好價錢同埋新鮮, 所以最後咩都無買到
